I will have to try this. Nice to see a big pot of water to cook the pasta. Too many people use just a few inches of water, but they aren't Italian.

I love Mutti. So sweet and never tastes like the can. So delicious. I also use the Mutti Passats for pizza sauce, Yum! You are the best Chef Pasquale di Puglia. Thank you.

If I didn’t know he’s of Italian origin, I would have thought he’s Latin American. His looks are way more Latin American than Italian. Great funny Chef nevertheless. God bless.

Grazie Pasquale, ho l'acquolina in bocca 😂. So this is a Roman version to use bucatini. In Amatrice they use spaghetti and no olive oil since guanciale has enough fat to be rendered. It is so sad that Amatrice is not on map anymore after 2016. Thank you for keeping memories and traditions Salute e cin-cin!

At 2:38 my dream comes true! What we're talking about here is HOG JOWL, so popular on New Year's Day! I was JUST THINKING that I don't see any Guanciale around here, have never heard of it... but we have lots of Hog Jowls! Smoke flavor, sometimes you can find peppery bacon. BUT there is some nice fatty hog jowl in my refrigerator right now! I feel lucky. Might actually go look for some imported tomatoes, just to celebrate. This seems very close to actually happening. Thanks!

Hello and Salute' My Friend, I gotta little Vodka on the rocks with a nice Cold Beer, too much snow make my nerves bad along with the CoVid, but any way I like this recipe, I have to go to the meat market for the meat, but that's okay I need a couple of things in addition. So I have made some chilled shrimp and nice lemon slice, good coctail sauce I make with Kelchners Horseradish, that's a Oh yeah Baby Too! Hate to say this, but it's time for everyone who can to change to another platform such as Bitchute, Yugetube, Rumble, etc. I am contemplating sending a message to all my bloggers who do not post political shows notifying them of this and dropping all my YT bloggers and deleting my account. The last straw was YOU ARE FREE TV. She always cites the Sullivan Act in protecting free speech in broadcasting and stating that her show is "for entertainment purposes only." You Tube has gone the step too far for my taste, and I choose to remove my account from all those "money minded" advertisers who throw up unlimited ads during my viewing. If enough of us stood up to YT, they would stop censoring. And, if they don't stop censoring bloggers and viewers, and enough of us delete our accounts, their advertisers will all leave and go bust. It might make it tough for those who depend upon YT advertisers for their livelihood, but they can change platforms as well. It would be tough for a while until they move to other platforms; but there comes a time when folks must bite the bullet and stand up for their rights. I appreciate the fact that not everyone CAN do this, and I will miss those who can't; but, I have had enough. Good luck to all of you--bloggers and viewers; but keep the faith that someday, things will get better

Guanciale can be very hard to find in some places. What's a decent substitute? I heard salami can work.

After cooking the guanciale, I set it to the side and use the fat to sauté some onions and then proceed. At the end I add my fried guanciale to keep that crisp texture. To each their own, but then again mi ha insegnato un Abruzzese!

I’ve used pancetta when unable to locate guanciale. It’s not as authentic but it works.

Bucatini all'Amatriciana was, quite literally, the first truly authentic Italian dish that I ever did. It is still my favourite pasta due to its ease and simplicity of preparation. My only difficulty is the fact that (possibly due to this stupid virus) I cannot get bucatini where I live. I may need to start ordering it online!
