Ten thousand thanks ,I do my sourdough with mix of buckwheat and other flour ,I was about to order my first soba noodle, I will play and try to make my own just a little slowly until I feel good about it .An African fan here,I will try slowly definitely.bye.

I've made noodles and pasta many times before, but never made homemade soba noodles. It takes lots of skill but I'll think about it. But you did good.

You can do nori (seaweed) flakes, natto, Lightroot paste (nagaimo/ huai shan) or just plain sea salt.

What is the name of the red and big bowl where you do the noodles .I want to by one and I don’t know the name.besides is very difficult to find one in my country (argentina) I make my soba at home

When I’m trying to make it doesn’t hold n breaks as no gluten …what should I do ?? Can we use noodle machine

Yes it takes practice to make one that doesn’t break. You can use noodle machine or cut with knife too. Otherwise, you can also do the usual style which is 80-20% buckwheat and all purpose flour.
