Budget-Friendly Comfort Food: Hearty Beef Stew with Cheesy Biscuits
Ingredients
Stew:
1 Kg (2 pounds) ground beef
1-2 onions, chopped
10 mL (2 tsp) fresh thyme leaves
1-2 garlic cloves, minced
Salt and pepper to taste
45 mL (3 Tbsp) tomato paste
30 mL (2 Tbsp) Marmite
750 mL (3 cups) mixed frozen vegetables
750 mL (3 cups) beef stock
Flour to thicken if needed
Biscuits:
500 mL (2 cups) flour
10 mL (2 tsp) baking powder
Pinch of salt
125 mL (½ cup) butter, cut into small pieces
325 mL (1 ½ cups) shredded cheese
250 mL (1 cup) buttermilk
Preheat oven to 230ºC (450°F).
Heat a large oven proof pan over medium-high.
Brown the beef, breaking it up as you go.
Add onion, thyme, garlic, salt & pepper.
Stir in tomato paste, and Marmite.
Cook, stirring often, until well incorporated.
Stir in beef stock; bring to a simmer.
Reduce heat to medium-low; simmer until thickened, 15 to 20 minutes.
Add peas and carrots; stir to combine.
In a food processor combine, flour, salt, baking powder, and butter.
Whiz until uniform, then transfer to a bowl.
Stir in cheese, and then buttermilk just until incorporated.
Drop biscuit dough directly on top of stew, in small clumps leaving about 1⁄2 inch of space between biscuits.
Place pan in oven and bake until biscuits are browned and flaky, 20 to 22 minutes.
Let stand 5 minutes, and serve.

Our silly family name for this dish is blarghambler. I grew up with folks who kept an eye out for grocery sales and always kept the ingredients for this in the pantry and freezer. You can top it with biscuits or mashed potatoes, serve it on top of rice or noodles, or even just eat it with bread and butter. What do you have and how many people do you need to feed? Makes great leftovers if there are any. This was one of the dishes of my childhood that taught me cooking methods (as opposed to recipes). Every cook in my family did it a little differently and had different resources but it was always hearty, filling and welcome.

Mom used to make something similar. We called it pork & biscuits. Pork stew with drop biscuits on top. I'm sure that family recipe started out the same way, as a what's on sale at the market meal. Now I make it for our daughter.

I've got a fast and dirty version. It's really fast. I worked long hours, sometimes 3-4 days at a time. (still do on rare occasions) When the kids were still at the house, my wife found a recipe called 123 soup. Two cans of Ranch Style Beans, two cans of minestrone soup, two cans of Rotel tomatoes and diced green chilis, and one pound of ground beef. serve with rice or crackers. maybe a dollop of sour cream and some grated cheese. We still make this from time to time. We're going to have our granddaughter this weekend, she's almost four. I'm thinking I'd leave out the Rotels for her.

Looks delicious. For the biscuits, add a bit of chopped parsley, brush with garlic butter, and they’d be like the Red Lobster biscuits. Might need to brush on some more butter after it comes out.

Wow, your biscuit recipe, minus the butter, is identical to my families "dumpling" recipe. We drop the dumplings on top of the stew (or soup) by the spponfull and let them steam with the lid on for 15 minutes. they become tasty clouds of delicious. I'm definitely going to try your method next time, it looks wonderful, thanks for making the world a bigger place.

My mom and a bunch of church ladies put out a cookbook title 'cooks of prowess'. There was a stew recipe that had dumplings quite like what you have made here (same recipe) only it was with tomato juice. I love those dumplings.

Looks fabulous. Really like all the veggies and the cheese in the biscuit is right up our alley too. Hope you don’t mind a question. We are not real big Marmite fans, I assume something like Worcestershire ( or our fav in beef stew, soya sauce)would work ok as a substitute? Thanks again for all your work to put these out.

I use marmite in beef dishes, too. You can't taste it, but it does bring out the beef flavor a lot like Worcestershire sauce.

I admit to being a big fan of Marmite and thus have some bias towards the product. Being a very accomplished cook, I use it quite often in Beef dishes. I agree, that the flavour enhances the beefy flavours of a dish. Very similar to, how Coffee enhances Chocolate flavour. Having said that. I also find Soya, and W. Sauce enhance Beef flavours as well. Often times, I will use all three together and also a good splash of Red Wine! For this dish, I personally would use Wine, W Sauce and a little splash of Soya Sauce, as well as the Marmite! Good luck to yoy

Another great method for a delicious meal! Here in my area of Manitoba frozen ground beef chubs actually cost more then the the little trays! Frozen ground pork, chicken or turkey is much more budget friendly.

In Australia biscuits are known as scones but if they’re used like this they’re called dumplings (not to be confused with Asian dumplings). Was craving comfort food last week so made chicken stew with dumplings.

This seems a lot like a recipe my Mom used to make, though she was taking shortcuts. She called it hamburger pie. You would press out the biscuit dough on the top of the filling in a cast iron pan and put it in a very hot oven to bake. When the biscuit top was done, you would invert it on a plate and top it with cheese. I think the filling was onion, celery, bell pepper, ground beef and a can on condensed tomato soup. Maybe also some salt and pepper.

We make a cobbler like this after having rotisserie chicken or baked turkey. Since the meat is cooked it goes in last. The pan is normal ready to go in when the oven reaches correct temperature.

Hot damn this might be a new staple technique. Big fan of pot pies for leftover usage but always too lazy to bother with the pie making process for that. This ends up being a perfect one pot/pan meal. Used up some leftover chicken adobo and coq au vin I had from the past couple nights with some leftover/fresh/frozen veggies. Went with a cream and chicken stock for the base. This came out amazing. Get the best of both worlds with a dumpling texture on the bottom of the biscuit and a flakey crusty biscuit on top. Thanks again for giving a simple process that gives out awesome results you two!

Cooked this and enjoyed it. Next time instead I will top with scoops of mash and butter and cook cheese biscuits on the side so they are firmer. Incorporate flour using whisk in sieve .

I'd put carrots and potaotes in mine, so I assume those wold need to be pre cooked somewhat before adding to the dish. I'd also love it with parsnips in there, too.

Saw your episode and couldn’t wait to make this recipe. Had to wait a bit as it took me 4 trips to different grocery stores to find Marmite! I swear I have seen it every time I have gone shopping,but then when I actually need to buy it,I can’t find it! Recipe worked out beautifully and everyone enjoyed it. Next time I am inclined to cook stew, I may consider doing a scone top. FYI, I think the American biscuits and the scones I grew up with are close kin, as every video I have seen of biscuits sound like the same basic method, just with buttermilk.

When the raisins went in (2nd pecan pie), I cringed and was slightly revolted. I used to plead with my grandmother to omit them even from bread pudding. I like raisins by themselves or when they remain wizened in recipes, but if they soften and swell, my mouth and mind rebel. A few dishes call for them to be chopped, and that works for me, too. As a kid, I would let my little raisin box remain opened for a couple days before munching away, after accidentally discovering the "improvement".

We had to stop buying beef altogether even on sale here it's over priced for us. We switched to ground pork or chicken. Even with the pork or chicken it's half a pound of meat and 1 1/2 cups of lentils to stretch it. Thanks for the video. off to find new recipes for leftover turkey.

Plain yogourt or 1/2 milk, 1/2 sour cream - pretty much 1:1
