What a coincidence! I actually cooked your parsnip soup last week with your umami seeds recipe. Except I had replaced the apples with pears: it was as delicious. And a few days ago, I cooked the polenta that was sitting in the back of my cupboard with mushrooms and kale; another one of your great recipes. This got me out of bed. I now have baked oatmeal cupcakes going in the oven (I’m having a friend over later and will use my other baking dish for a Vegan frittata so I’m using the cupcakes pan because I’m too lazy to wash up 😂 I hope it turns out okay). Im also eyeing my bag of polenta in the back of my pantry. This is such a great reminder to use what we have 🙏🏾 thanks!
Thanks Malin! I am a huge fan of topping oatmeal with yogurt too 😋 One of the accidental ways that I make a budget friendly meal is when I don’t feel like shopping. That’s when I dig in the freezer for frozen veggies and dig through the cupboard for lost grains and beans. 😆

If y’all need an alternative to maple that’s a bit more affordable, go ahead and make brown sugar syrup. I’ve never really measured this, I maybe make a half cup of water to just under a third cup of sugar. Just simmer together, you can store it and use for later. You can add plant based butter, I love to add extra creamy oat milk, and spice as you please. If you have happen to already have fenugreek seed powder, give it a pinch to give it a maple flavor. I know brown sugar can be a bit more expensive than white sugar, but here in the states, maple syrup is $20 for a small bottle.

I'm glad to see this video. I've always watched Vegan recipe videos, but in real life; it always comes down to what I have in the fridge that has to be used before it goes bad and what's in the pantry.
I'm also trying to reduce my food spend so using a slow cooker to batch cook (& save on gas bill) When you said 'herbs' you've just reminded me I forgot to add bayleaves to my stew! Thank you!! 😂 Ps might regular sugar be a cheaper option than syrup in your oats? Soft brown dissolves pretty easily?
