Miguel Barclay's bacon and savoy cabbage pasta. Cook some lardons or sliced streaky bacon with garlic in some oil, add chopped up raw cabbage and cook through. Add cooked pasta, black pepper and serve with grated cheese of choice. It doesn't sound like much, but it's blooming delicious, filling and very cheap. Good luck! Cheepo meal: take some minced meat (or veggi version), seasone with the generic tacos seasoning. Throw it in a pot. Dice up some potato and carrots and toss them in there. Add a can of crushed tomato, a stock cube and water. If you happens to find some left over red wine some where have a splash of that (absolutely not necessary, and but if you do it with beef it can be nice) Boil the concoction. Add in some sweet corn as well, and if you have some baby spinach lying around toss that in as well. If there is any other veggies you may think fit and people will eat, you can hide them in there as well. I rather like to add some black beans as well. Any how, dish up the soup / witches brow in bowls, ad a little bit of Greek yoghurt and if you feel fancy crush some taco style crisps on the top. For a five star review ad a bit of green leafs, like coriander. Or if you can make people eat lentils, skip the mince, and do it with that instead. Will become more of a stew in that case. How is the price of sweet potatoes over there? I like to bake one / persons in the oven and then make a curry thing to go with. Shred up a lot of carrots, in to a pot and try them around with masala (or stuff like cumin, garlic, ginger, paprika powder…). If it is to your taste, dice up an apple in to small peace’s and put in. Toss in chickpeas, add a cab of tomato’s and a metric but load of spinach. Boil until warm through. Also nice with a bit of Greek yogurt on top. A bit carb heavy for some but it’s warm with spice and sweetness and perfect for a rainy day.
You can cut minced beef with lentils. Also, cottage cheese blended ( that is the secret) with pasta sauce (tomato based) with pasta, bread (homemade if you like) and salad. cheap filling and high protein (cause men always worry about protein) and if you get 1% not to bad calorie wise (for your husband)

Let the challenge begin! If he’s doing sl world there is a bean and rice taco recipe on the app. Gluten free too. We have them with grated cheese in and potato wedges. The bean mix we add a bit of extra chilli powder to it. Good luck we are all behind you 💪
Good luck! ❤ I found that prepping (not cooking just preparing) dinner the night before helps keep the food budget down. So i cook, prep, then clean 8nstrad of prep cook, then clean. The first night is the worst because you prep 2 dinners. After that, it is pretty easy to maintain x
What a positive challenge! Best of luck. It might represent a small saving, but could you add an extra week on to your hair cur schedule - eg go seven weeks instead of six? It's a matter of days each time but adds up to one or two saved appointments each year (depending on how regular you have them!). On the subject of meals, we tend to do big batches of things like chilli and then we use this for a number of different meals - so chilli and rice, burritos, even a pizza topping as a change to a tomato sauce base. It can work with a tomato sauce too - cook a big batch then it can be used as a pasta sauce, a pizza topping, thinned down as a soup or combined with other veg to make a veg soup, a casserole base etc etc. It takes a little prep but then always means you have something close to a complete meal, which massively cuts down on the convenience foods you need to buy in your weekly shop. It's really helped us crop down our food budget :)

Interesting challenge, I've not seen anyone do this before. I would maybe consider reducing the personal spends and increase the food budget as I spend £40 a week as a single person so your £60 budget will be really tight. It will be interesting to see the ideas that you come up with to get it that low though
It is going to be very tough and we may end up with some odd combinations at the end of the month. Reducing the spending money or upping the budget is always an option if we can’t make it work for 3 🙂
