Bulgarian yogurt is the real yogurt, and the best as well! The bacteria makes is what makes it so unique and tasty. No other yogurt has that tangy flavor to it, because when they're strained all the bacteria gets destroyed and its just not the same. My grandma makes homemade yogurt in our village, and makes the best banitsa with yogurt and sirene cheese.

Finally!!! Someone actually acknowledged that these two are different types because of the bacteria content 👌Thank you for this video, I can finally show people the difference and they would actually listen lol. I would also advise people to try and make it at home, nowadays they even sell yogurt makers, so you don't have to worry about the temperature at which the good bacteria thrives. You still need to purchase a quality yogurt to begin with though. I have always been very interested in biology, which goes hands in hands with nutrition, so it's great when people make such videos, especially those that include my country lol BG doesn't get mentioned a lot in good context unfortunately ✌️

we in Bulgaria also use our yogurt for a face mask and after sun burn treatment. In both cases just get some from the container and slap it on your skin. When you get a sunburn, slap a thicker layer on, relax infront of the tv, it gets absorbed by the skin. the moment you place it, the pain from sunburn stops. and if you leave it for over two hours, your skin becomes as smooth as a babys skin. I have an oily Tzone, and when i use yougurt as a face mask, my skin imediately becomes matted, as if Ive used powder. I also have circlesmaround my eyes, and unlike other creams, Bulgarian yogurt, once placed on my eye lids, doesnt smear, doesnt iritate my eyes If you dont believe me? Try It.

Bulgarian sour milk is highly respected in Japan and China. They use the Bulgarian lactobacilli. Read the history of the Bulgarian village of Studen Izvor and what is the connection with Bulgarian milk. Who is Dr. Stamen Grigorov and what did he do? The name Greek has gained more popularity in the West, which is more marketing. I wonder why at the end of the 19th century the longevity of the Bulgarians who ate sour milk was studied, and the attention was not focused on the Greeks, who were liberated from the Ottoman rule much earlier and were open to the world? It seems that the Greeks did not have a tradition to produce yogurt as it was in Bulgaria. The bacterium Lactobacillus, which believes in the nature of Bulgaria, is also interesting. If you are looking for a truly original Bulgarian sour milk, which the Bulgarians ate centuries ago, it must be made of buffalo, goats and sheep, not cows. It must be high in fat. The ancient Romans did not know what sour milk was. The Romans wrote that equestrian nomadic peoples drank yogurt. In its current form it appears much later. The funniest are the Turks, who cling to the very word yogurt :) For them, the Turkic peoples are Turks, and this shows low intelligence.

This yogurt is not even remotely Bulgarian style! How do I know? Well, as a Bulgarian myself I grew up with yogurt which is embedded in our culture. There are hundreds of different brands overseas. Now, about this yogurt-like substance. 1. Bulgarian yogurt is slightly sour but boy this thing is like you are eating lemons. 2. The expiration date is in 3 months....yeah this one is a pile of BS. Good luck finding anything organic there. Commercial products of Bulgarian yogurt overseas are usually good for about 2 weeks. Homemade maybe 1 week. 3. Clearly stated 24-hour fermentation. Another BS. No wonder it tastes so sour. It shouldn't take more than 8 hours, otherwise, it gets really sour. The bottom line, do not even waste your money on this. You might as well buy Dannon which is still "fake" but at least it doesn't break the bank and it tastes better.

I sometimes buy bulgarian yogurt mostly as starter for making my own. I also make my own skyr. I make both mostlyvwith store bought milk but every once in a while buy whole raw milk to make it with and use that to culture the next store bought batch. The most recent "yogurt" I started making is with lactobaccilus ruteri. I have been doing keto and if almost 2 years now for weight loss and medical reasons. My gut is highly damaged and regular yogurt wasn't enough to effecty digestive issues and promote healing that I need. The ruteri I only recently found out about, amd doing it just over a week has made a extreme marked difference. I'm about to upgrade that though after finding out about cultures that when co fermented with the ruteri really amplify the effect. I'm waiting on a multi probiotuc supplement with multiple strains including the three I want, ruteri, l gaseri, and basillus coagulance so I can co-ferment together to get the top benefit. BTW, I make my bulgarian yogurt with whole milk, my skyr mostly with 1% milk, and the ruteri so far has been made with whole milk but I'm gonna upgrade to heavy cream to increase the thickness. I like my yogurt super thick, on the verge of spreadable cheese consitancy. But tgars just me. Greek yogurt even full fat I find often more watery than I really like. Not trying to be preachy, but I thought I'd add to this great yogurt debate by stating my preferences and adding info on another option thats really good. Btw, the ruteri can't technically be classified as yogurt by fda regs because of the strains used and the time and temp fermented. It won't ferment above 100°f because it will kill the microbes. So 97°-100° F temp for 30-36 hours to ferment. You must add prebiotuc fiber like inulin for the cultures to eat because after 24hours all the lactose is gone and to get highest culture content it needs at least 30 hours fermenting. And no, you won't find thus in store at all. Though probiotuc supplements with the ruteri and other strains are pretty cheap and easy to find on amazon. Also, any dairy used for it must be ultra pasteurized or boiled and allowed to cool so no competing cultures exist to kill it off. Its a very delicate and finicky ferment but very beneficial. Though a lot of the benefits its claimed to have I am not saying are true until I see for myself. The only benefit I've seen so far is the gut healing. I try all kinds of new foods and remedies to see if they help or not, and if they aren't beneficial I usually don't continue, especially if they show negative results ik instead of positive or at least neutral. Bulgaruan yogurt and skyr if paired right are positive and the ruteri is a extreme of that as is sometimes the raw milk ferments.

How are these Greek and Bulgarian yogurts if they are all produced in the USA? I know you can cultivate the enzymes/bacterias but it's still not the same product. This is especially valid for the Bulgarian one, since pretty much every city, town or village of Bulgaria produces their own and it can differ in taste and structure by a lot while the so-called Greek yogurt (στραγγιστό) goes through several processes as described here, before packaging, and tastes pretty much the same.. Be it ФАГЕ, ΟΛΥΜΠΟΣ, ΚΡΙ ΚΡΙ, ΔΩΔΩΝΗ... I am Greek and I eat a lot of dairy from the Balkans, I have to agree, the Bulgarian yogurt is just amazing. This is the reason why they are able to ferment they way they do. And this is the difficult part in fermenting the product. BUT the good news is that they are prone to want to be in a symbiotic relationship and they more or less work with you. ALSO-Greek yogurt is strained OVERNIGHT. One more difference-when you incubate the milk, Bulgarian sour milk is NEVER STIRED!

Very interesting the difference in probiotics that exists between the two yogurts However, I have a small objection. Here in Greece, when we talk about traditional, we mean the non-strained yogurt with skin and whey, who we made with sheep or cow's milk and has sour taste. The strained version that appears as a representative of traditional Greek yogurt in the video or the other versions of strained yogurts like those with added milk cream (anthogala) or the worst form with starch and milk powder which is sold cheaper as a substitute for strained are not and never be traditional. By the way, I tried to buy from "fage" few years ago and the milk which used wasn't from Greece , and I don't know if I should consider the **yogurt** in the video as authentic Greek. But also I have tried both Bulgarian and Greek yogurt and i like both of them, maybe Greek sheep's yogurt a little more, but the Bulgarian was not inferior in quality."

I am Bulgarian and I make a homemade yogurt. It's super easy. All you need is full fat milk (organic preferably) and a Bacillus Bulgaricus yogurt starter. I buy the yogurt starter from amazon: @t Here is how I make it: Slowly heat 1 quart of pasteurized milk (I use this one:@t but you can use your favorite). Remove the milk from the heat and allow to cool (not completely). Add the Bacillus Bulgaricus yogurt starter. Pour milk into containers (jars), cover the mixture for 5-12 hours (I cover it with a blanket). Check after 5 hours to see if it has set. If it has not set, leave it for up to 12 hours. Refrigerate the yogurt for at least 6 hours. You can eat it at any time (refrigerating helps set the yogurt).

There was no Greek yogurt in my area so I was told that Bulgarian yogurt (trimona, white mountain) was better because of probiotics or something like that, didn't like the taste because it was more like a very sour yogurt, I gagged every time I ate it but I persisted and got used to it, I ate it for several months and the the problem didn't go away, I even think it became worse. So I just figured I'll have to live like this for the rest of my life, a couple of months later my grocery shop brought Greek yogurt by Fage, I'm not even kidding after a week my symptoms were gone, Greek yogurt is my white gold plus it was edible.

@JigsawHealthTV
@JigsawHealthTV 5 лет назад
You bring up a great point. So there are a lot of benefits to taking in dairy products. Vitamin-Rich nutrients, complete proteins, probiotics, bone health, etc. That being said, there are some downsides to taking dairy, but it depends on the person. Thomas advises listening to your body and seeing how your body reacts to dairy. For some people, the benefits outweigh the downsides to dairy by a lot and they experience little to no negative effects. Other people may be more sensitive to dairy and it makes more sense for them to find an alternative to dairy. The point of this video was for those people who follow a ketogenic diet or who don't have adverse reactions to dairy that eat greek yogurt. Thomas is offering an alternative to greek yogurt that people can try: Bulgarian yogurt. The biggest takeaway is that everybody is different and has different reactions to different kinds of foods. Rather than deal with absolutes and say one food is bad for all or one food is good for all, it is better to determine what is good and bad for your individual body. If you are the kind of person where your body is more receptive of dairy than others and you consume Greek Yogurt, than this video is for you. I hope that makes sense. As always, thanks for tuning in!

@npocToBaT 3 года назад
@@oylesinebiriyimiste1 The Romans wrote that the equestrian peoples north of the Danube drank sour milk and that these peoples were not Greeks because Romans and Greeks had connections since ancient times. Therefore, the Greeks were not the creators of yogurt. The word yogurt has imposed, but different peoples have their say. The Romans and the equestrian peoples north of the Danube, like the Bulgarians, surpassed for centuries the emergence of the Ottoman Turks, as well as the Mongols of the late Middle Ages and their invasions of Europe. I do not claim that Bulgarians and peoples like them are the primary sources, because there is no definite evidence, but it is logical that they are rather than the Turks, Greeks or anyone else. The territory of the Balkans, and in particular Bulgaria, are one of the the best places to extract lactobacillus, from which yogurt is made today. This is already a science. There were shepherds in the Balkans thousands of years before the first Ottomans appeared. The first fermented milk was obtained from mares, goats, sheep, buffaloes. There are regions in Bulgaria where the presence of this lactobacillus in the natural environment is much higher. In the 19th and 20th centuries, European scientists searched for the secret of the longevity of the Bulgarians and came to the conclusion that this was due to fermented milk, white cheese and the environment in which they live - nature in Bulgaria. The nature in Bulgaria and Anatolian Turkey is radically different, including in Greece. Read who discovered the lactobacillus bulgaricus and what is so impressive about it. China, Japan, the USA, Argentina and many other countries produce their yoghurt with Latobacillus Bulgaricus, which is found in the nature of the Balkans and especially in Bulgaria. In Japan and China, yogurt is highly revered, but you will not see that it is called Turkish or Greek. In the United States, Greeks have a large lobby. Turkic peoples, as well as horsemen like the Bulgarians of the 4th-7th centuries, drink koumiss for understandable reasons. It is wrong to put a sign of equality between the equestrian Turkic peoples and the Ottoman Turks. For example, the Khazars, Pechenegs, Cumans, Mongols are examples of Turkic nomadic equestrian peoples, but they are not Ottoman Turks. The Khazars are a much older people than the Ottoman Turks and also drink koumiss.

Plus, I'm not going to sympathise with Bulgarians, because nothing justifies them calling Greek yogurt fake. One person even called all Greek products bad and received upvotes, probably from other Bulgarians.

@@PaleBlueDott You dont have to be so hard headed. I'm trying to have civil discussion but it seems all you want is an argument. Us Balkans really need to work on trying to stop taking things so personally. And I get there's a valid argument that we're defending our culture but getting offended is not going to convince anyone.

Lactobacillus delbrueckii subsp. bulgaricus was first isolated in Bulgaria and that's why it has that name. Otherwise it is naturally widespread and not only found in Bulgaria. What makes authentic Bulgarian yogurt a lot more special than all others, is the proven anticancer properties of a specific strain, called LB51, which is naturally occurring and widespread in Bulgaria and the only strain, out of about 70 tested, to show these properties, which is well documented. Naturally cultured/from environmentally present organisms/ Bulgarian yogurt will almost certainly have this strain, but of course, after d-r Ivan Bogdanov and his crew found about it in 1967, they patented the strain and now most commercially available cultures and ready to consume products are made with other strains of LB, cause one has to pay quite more to use the LB51 strain. So, unless it specifically states on the package, that the Bulgarian yogurt(or culture) was made with LB51, or it is a raw product, that was left to ferment by itself somewhere in a beautiful bulgarian village, it is most probably not any better than the Greek, just a bit more watery.

how can a yoghurt have 9 gr of carbs left? are you not fermenting long enough so some carbs are left, or add carbs? those lil sweet bugs work hard to make acid to denature proteins slowly, and eat the sugars out. i suspect 9 gr one will not have the sour refreshing taste of yoghurt. it can be good for making sweet foods though. but i will allways see yoguhurt with its traditional sidekick salt and in or on savory dishes and soups. and as a drink of course. try fermenting a bit more, adding more starter yoghurt to the milk might help.
