Burger Bowls

8 slices cooked bacon, crumbled
2 1/2 c. shredded cheddar
2 lb. lean ground beef
Kosher salt
Freshly ground black pepper
Ranch dressing, for serving
Chopped chives, for serving
Bread and butter pickles, for serving
Step 1
Preheat oven to 400°. In a medium bowl, toss the bacon with the cheddar cheese.
Step 2
Coat a 12-cup muffin tin with cooking spray. Season beef with salt and pepper. Add a small handful of beef to each muffin tin, then press up the sides to create a cup. Divide the bacon-and-cheese mixture evenly among the cups.
Step 3
Roast until beef is cooked through and cheese is melted, about 15 minutes. Let cool slightly.

Tonight was a cheat. Dominos. But tomorrow we are using freezer chicken breasts/ shredded cheese and making fajitas. A friend of mine has a huge garden and gifted us tomatoes and jalapeños.

I have not had a true Muskmelon since the '70s in Southern Cali. I have had Cantaloupe which some people refer to as Muskmelon but believe me there is a difference. Those burger cups look good.

I grew up, up north and that is what we always called it they do call it cantaloupe but have always called it muskmelon lol. They were really good. Love your new pic by the way

@@citygirlhomestead I love a good Cantaloupe. The last good one I had, my sister got at a fruit stand near Spokane Washington. I usually pick out one that tastes like fingernail polish remover smells.😂

After further investigation, I found that cantaloupe is Muskmelon but there are different varieties. Whst I am referring to is the Tuscan variety with the ribs on the skin. I wish I could show a pic nut RU-vid won't let me.

Looks good, Kris. I've made similar. I've hollowed out a potato filled with cooked burger or cut up chicken and baked. I've also used valdalia onions and filled. Very diabetic friendly. I love musk melon it's my favorite melon. ❤

I made it up don't remember seeing anyone or a recipe for them. Was trying different things for diabetics and for non diabetics that I could make at the same time for my family. Necessity is the mother of inventions, so the saying goes. ❤

Hey friend. If you spray your tin foil before you put it on the cheese, it will help to keep your cheese on your muffin cups and not the underside of your foil.
