Burger with fish at home | Easy and delicious codfish recipe

If you are tired of meat and you are tired of the usual burger - it does not matter! Now we will cook a wonderful cod fish burger with spicy homemade mayonnaise, green salad and cheese. This is a great idea for an informal yet delicious lunch or dinner!
Ingredients for two burgers:
• For the fish cake:
Cod fillet - 300 gr.;
Zest of 1/2 lemon;
Parsley (chopped) - 1 tbsp. l.;
Salt;
Black pepper.
• For breading:
Eggs - 2 pcs.;
Flour;
Breadcrumbs.
• For frying:
Sunflower oil.
• For homemade mayonnaise:
Yolks (room temperature) - 2 pcs.;
Juice of 1/2 lemon;
Zest of 1/2 lemon;
Sunflower oil - 250 ml;
Wine vinegar - 1 tsp;
Mustard;
Salt and black pepper.
• For the burger:
Buns - 2 pcs.;
Tomato;
green lettuce leaves;
Cheese.
Cooking:
1. To prepare fish cakes, start by cleaning the cod fillet: rinse it under running water, dry it thoroughly with a kitchen towel, remove all bones with kitchen tongs. Cut the fillet into pieces and grind in a blender until a homogeneous minced meat is obtained.
2. Transfer the minced cod to a bowl and season with salt, pepper, chopped parsley and lemon zest. Mix everything well with a fork.
3. Lay a sheet of parchment paper on a cutting board and start shaping the fish burger. Spoon the minced cod into the culinary ring and press down with the back of the spoon. Remove the ring and cut parchment paper around the patties to make it easier for you to lift.
4. Beat the eggs and bread the fish cakes, rolling them first in flour, then in eggs, and then in breadcrumbs.
5. For the preparation of mayonnaise, it is important that all ingredients are at room temperature. Dip the yolks into a bowl with high sides, add the grated lemon zest and a few drops of lemon juice. Beat with a mixer at medium speed. Very slowly add sunflower oil and continue to work with the mixer. When you pour half of the sunflower oil, then you need to add the remaining lemon juice and continue to pour the rest of the sunflower oil while working with a mixer at medium speed. At the end of the mayonnaise, salt, pepper and pour a teaspoon of wine vinegar. Mix it all up!
6. Put the pan with vegetable oil on the fire and bring the oil to a temperature of 160 ° -170 °, put the fish cakes in the oil with a slotted spoon, cook for 4 minutes on each side until the cutlet is browned (alternatively, you can cook fish burgers in oven at 180° for 25-30 minutes).
7. After cooking, place the fish cakes on absorbent paper to remove excess oil.
8. Divide the burger buns in half and toast them for a couple of minutes in a hot skillet to develop a crust.
9. Put mayonnaise, cheese, lettuce, cutlet, more mayonnaise, lettuce on the half of the bun and cover with the second half of the bun.
10. Eat fish burgers while still hot!
Storage.
After cooking, it is advisable to immediately use fish cutlets.
Fish cakes can only be frozen raw and breaded if you used fresh fish.
Advice.
Salmon, flounder, tuna, if you don't like cod, go to the fish counter and choose what you like best.
