G’Day Beddy. I forgot to mention that you can put a knob of butter into that béchamel sauce to give it the same buttery flavour as a roux. Another tip is add a chicken stock cube and a bunch of chopped spring onion and a block of Philadelphia cheese for a beautiful sauce. This goes great on its own on pasta or as a gravy for veggies but my favourite is to add prawns (even seafood mix or fish pieces) and serve with any carbohydrate or as the surf part of a surf and turf.
