Butter Pecan Cake w/ Cream Cheese Icing ~ And A Very Unique Watermelon

Butter Pecan Cake
1 box butter pecan cake mix
1 cup water
3/4 cup oil
4 eggs
1 container coconut pecan Icing
Preheat oven to 350°
Mox all ingredients together and pour into a prepared bunt pan and bake for 45 minutes or until done
Cream Cheese Icing
1 stick (1/2cup) of room temp butter
1 8oz block of cream cheese
1 tsp vanilla
4 cups of powdered sugar
Beat with wisk attachment until light and fluffy

In oklahoma it's not unusual at all to see a orange meated watermelon. My favorite watermelon is a Black Diamond. Of course I salt my watermelon and canalope.

Decades ago we grew "Yellow Doll" watermelons. They are round. We took chunks to a church potluck. Everybody was expecting pineapple. There were lots of funny expressions and exclamations of, "That's watermelon!!" Fun memories. We also grew "moons and stars" watermelons. Look up what they look like. No, we eat our watermelons and cantelopes au natural.

I remember you making this cake a few years back and you put a glaze on it. I like the cream cheese icing better. This is a great cake. I’ve made it also and used apple cider in place of water in one of them and caramel flavored coffee sweetener in another one. They were delicious. I do not salt my watermelon or cantaloupe, but, my grandfather always did.

I never cared for watermelon. It was something as kids ate once a year in the hot summer evenings. My father would line the picnic table with newspaper and us 4 kids along with Mom and Dad would sit around the picnic table passing the salt and having a good old time counting the seeds!!!! I loved counting the seeds more than eating it. LoL.

That one thing I don't like about the stand mixer, it doesn't get to the bottom. I usually put all ingredients that go in first into the bowl, then mix it, it so hard to add things around the beater... will try this absolutely, looks delicious.... I wish the manufacturer would’ve made the mixing bowl larger. But I’ve seen some people do you have mixers and there’s a scoop on top of it and you put your stuff through the final on top of the machine but I don’t know where they got that from I would buy it for sure

The past couple morning have been so nice and a bit cooler mornings which was a great feeling since hurricane Milton and no power... Thank the Lord we finally got it back been a rough few days.. my heart still goes out for those affected by both hurricanes within 2 weeks.. yes the baby Benji will be born very soon with a month or so... How exciting for all of you .. I'm sure Caroline will be ready I know this pregnancy she hasn't felt good... She has done an amazing job I think he will be a big baby is my guess 10 pounds is my guess... Will see give or take a few ounces either way... You mean watermelon!!! Lol.... Yes I have seen a yellow even an orange inside before it's cool and neat to see kids expressions with it being different...lol... If it's sweet I don't salt if it's not I do.. I have never seen a yellow watermelon, but I'm sure it is delicious as the red. I do not add salt to any of fruits, nor pepper. I like it best cold! I am curious, do you add an extra egg to the box mix because of the icing being added as the box instructions are to add 3 eggs? Thank you!😊
