Butter Shortbread Cookies
The Perfect Cookie for dunking.
( yields about 40-45 cookies)
Beat together about 2 minutes:
100 g margarine
60 g butter room temp
85 g powdered sugar
Add:
40 g egg yolk
1 tsp vanilla extract
Continue mix on low until combined.
Then, sift in 2 batches:
240 g all purpose flour
15 g corn starch
Pinch salt
Fold in using a spatula until the flour disappear.
Transfer the dough into a piping bag.
Leave at least one inch between each of them so that they don’t spread into each other in the oven.
Bake in preheated oven at 150°C for about 35-45 minutes or until edges are light golden brown.
The bottoms should be slightly golden as well.
Let it cool completely before decorate it with melted chocolate.
NOTE:
For chocolate cookies, simply replace corn starch with unsweetened cocoa powder, add 15 g powdered sugar.
Add 2 tbs pure chocolate extract (Nielsen Massey) to give a deep chocolate flavour.
