1 egg
125ml of sugar
100g butter
50 ml olive oil
250g flour
1 teaspoon baking powder
1 teaspoon of baking soda
200g of cooked pumpkin
65 ml of boiling water
Method
Beat the eggs and sugar until fluffy.
Crush the cooked pumpkin and add it to the previous mixture.
Beat for a good 3 minutes.
Melt the butter and add the oil to the mixture.
Sift the flour and baking powder into the mixture and fold in.
Boil the water and add baking soda to the hot water.
Immediately add the fluffed water to the flour mixture.
Beat well until you get a creamy consistency.
Optional: chopped pecans
Add to your mix and save some whole pecan nuts to add on top of the bread
Pour into a greased baking dish.
When the oven is hot ... 180 degrees and 45 minutes to bake the bread.
Remove from oven and let cool ...
Enjoy for breakfast or tea.
