OMG I whole roasted a butternut squash today and I literally just ate half of it plain with salt and pepper he's right IT CARAMELIZES AND THE SKIN IS AMAZING! how lucky I always hated peeling the skin off of these things such a hassle

Gennaro, I cannot say it enough, you are such a light and the best antidepressant ever. Your recipes are great. I already imagined making that hummus, but with roasted garlic instead of chili. Part of my lunch for tomorrow is set.

Every fall I love making a butternut squash and apple soup! Years ago I bought a carton of butternut squash and apple soup from the supermarket and it was... underwhelming, to say the least. So I made my Own! Equal parts butternut squash and a mix of apples, along with 1-2 onions and 2 carrots. Chunk it all up and roast them in the oven so they get all brown and smell amazing. (I roast the apples with the onions and the carrots with the squash, because everything takes different times.) While that's roasting, I grind up and toast a handful of mulling spices. then I put everything in a pot, with the spices, all the roasty everything else, toss in some dried chilis and bay leaves (if you can find fresh bay leaves those are incredible), then I top it off with chicken stock (or, keep it vegetarian and use veggie stock) and let it do its thing on the stove for a bit. At least an hour. Then I blend it all up and strain it through a mesh strainer to get out the tiny bits of spices and to make it extra creamy. Back in the pot, I add some heavy cream. Bowl it up with some tasty sour dough bread and a dollop of sour cream. It's autumn in a bowl and the whole house smells incredible all day!! Jamie, you should give this recipe a try on your channel!!

I had a soup in Germany with little crispy leaves strewn on the top , didnt know what it was! My German is limited but after a little back and forth with the server I found it was crispy fried sage absolutely delish!

I just adore you Jamie! I love your vibrant energy and enthusiasm! I didn’t realize I could just put the whole squash in the oven and bake it like that. I tend to stay away from the big hard squash because I no longer have the strength to cut them and it frightens me. So.....now the door is open again. Thank you!💕

I like that you demonstrate that you can use just about anything to get the same affect. Some might not attempt a recipe if they don't have the correct tools. I agree with Teddi P doing things on the fly is refreshing, and REAL.

Tried this out today. Was really delicious. We used a teaspoon of rice flour and a 4 teaspoons of corn flour... it turned out to be nice and crispy... Maybe you can try using these...

I go to slimming world and was buying some slimming world meals and you get a free butternut squash with two meals. I didn't know how to cook it but now I have three quick and easy brilliant ideas and I never knew you could eat the skin. I am not the best cook as you can tell. My dad does a good butternut squash mashed up with spinach Which was delicious. Thanks for the ideas I can now go back and get my butternut squash they are just the recipes I needed at just the right time. Chou bellisimo.

One of the things that make Butternut Squash so GREAT is the shelf life once you harvest them. I picked 18 B.N. SQUASH from 1 plant Oct.2018 and I have 6 left in my pantry March 3,2019. These will probably last 2-3 more months. Thats a pretty damn good shelf life for a vegetable. I have an awesome recipe Called "Savory Pumpkin Spice CHILI ". I'm gonna use Butternut squash instead with Ground turkey. I'm also going to try making carrot cake with B.N.S. 😎 👍

I love this man, his enthusiasm for creating wonderful, real recipes!! He is SOOO much more entertaining and nice to watch than that other rude, obnoxious, belittling cook/chef. can;t even remember his name, just his rudeness!! Jamie's cookware is also AMAZING> Have the set and love it;s temp contol, browning, cleanability!

Roasting a butternut is always the way mom does it. It's genius! Our Greek landlord taught her how almost fifty yrs ago. Also... Don't throw away the chick pea juice. You can use it for egg replacement in mayo and so many other things! Tahini and peanut butter all the way!!! I love a roasted red pepper hummus. Add some roasted peppers (fresh makes a difference vs the jarred) mashed up into it and then reserve some to serve on side of hummus! I got 7 Ways for Christmas and can't wait to get into it! Thank you! I just want to hug Genaro!

I've made the last recipe - squash + chickpeas + chilli + lemon etc. I forgot the coriander leaves, but the thing turned out so delicious I got iffy about even adding the leaves! I used to be stuck with just boring roast chunks of squash. this recipe is opening new horizons - Jamie, thank you! and er, yeah, more such real time stuff - it's so loose and chilled!

I have 2 boxes of Butternut squash leftover from my garden, so I’ll definitely be trying all of these recipes! I’m especially crazy about hummus, and I did look up those same jarred chickpeas that you used, so I’m absolutely trying that recipe first.:) I subscribed to Gennaro’s channel, as well. These are the kind of videos I like most! I can do other things and listen/watch at the same time! I added this video to my Sage and Squash video playlists. I cook up many sweet potatoes at one time too! Unlike butternut squash, the flesh below the skin of the sweet potato, if it is grown in loose soil, tends to be more "stringy" beneath the skin and above the flesh. It grows long and skinny but I like them the best so I just remove the strings, :)

Immediately tried the fritters with 1/2 a leftover cooked butternut squash. Just great! Will also try the hummus recipe soon. Great ideas that don't cost a fortune to make and are easily adjusted at home. Very grateful!

Forgot to mention!! My mum was jewish and in Montreal and Toronto there is a long culinary jewish tradition that still exists where you get real pickles and bagels and ... cottage cheese which is nothing like the curds you get in a typical supermarket; don't know how to classify it; smooth almost greek yoghurt tang used to love the stuff and used to had a bit of heavy cream and whip it to mix with lox and bagels, definitely one thing I miss!

I love you. you saved my life ten years ago, at a time when I was down your show when you are in the garden gave me a lift. After 25 years of living in Canada and the US, I came back home to Somaliland, which is Hargeisa. A country of its own that is safe and thriving. I own a small guesthouse and cook in my dream small kitchen bringing out delicious food that is well thought of and cooked with love. it has been ten years since I left New Orleans one of the most real places in the world otherwise I would not have lived there for ten years. I sent a message to you before a couple of years ago but I know you are a busy person. anyhow, I don't like to watch or hear any kind of news online or otherwise but some things seem to get to you no matter what unless you live in a cave. let me cut this short although it is kind of hard because I would like to sing your praises. so here it is I heard that you are going broke, but how can you go brock when everything that you have accomplished so far is inside of you, I always told my friends that you cook like an old lady, you have a soul that is something that you can never lose. I hope you and your family are well. for the last ten years, I had this wish, and that is to have a meal with you, and or Anthony Bourdain God bless his soul. Quick recipe: cook the living day lights out of a squash, add sweetener (sugar/ honey or spenda ) blend it up, add spices such as cardamon, cinnamon, star annes ect . Cook it a little bit it will be a great asian desert called "halwa".
