@@vintagepipesnightmares He didn't just work in a "low grade restaurant", i do not know what you are talking about. He was in and out of various high - end well established restaurants from what I recall before opening up his own restaurant in London. He may not have been well known before then but that doesnt mean he was not world class. Being one of the best or at least highly skiled in a proffession doesn't mean everyone will know you. No one knew who were the guys who created the atomic bomb until well after the fact.
You cannot love Gennero. From his infectious passion for food and cooking to his interestingly Northern English accent that comes when he gets going. "Do it! It's simple. Oh my goodness...."
After having tried it I gotta say though, the recipe doesn't work. Maybe I'm doing something wrong but when I make cacio e pepe in a pan it turns out perfectly, in the plate it just gets clumpy …
Gennero is a favorite of mine and not only because he's realistic with chiped china and bent utensils. It's because he displays so much evidnet experience.

Here in Puerto Rico, we eat rice and beans a LOT. It is considered by many to be the official food of the island. Is it the same thing in Italy with pasta?

@@martin-pecina Buď rád, že Gennaro vůbec nějaký videa dělá, aspoň je na co koukat :D U něj zrovna je úplně jedno jestli dělá ragu, co trvá 3 hodiny nebo tohle co je hotový hned, stejně mi to vždy zvedne náladu a udělá chuť na jídlo :D
@@martinkasik5722: Příteli, já Gennara už několik let bezmezně miluji, sleduji všechna jeho videa a mám několik jeho knih. Takže to nebyla kritika, jen pobavené pomrknutí. Navíc Cacio e Pepe je skvělá záležitost a jeden z důvodů, proč miluji italskou kuchyni. Tři ingredience a nazdar. Ale výsledek výborný.

Hmm what is it called if you use noodles instead of pasta? :D I often make noodles and add some parmesan & black pepper... Didnt know pasta+parmesan is actually a dish. Whats the point of these dishes tho since its just carbs and pretty much zero protein. Wont really keep the hunger away.
Such simple ingredients yet so easy to mess up. I can never get this right. Always end up cooking the cheese and most of it curdles at the bottom of the pan and not mixing in with the pasta and the pasta water. How do I get it just right? How long do I need to turn the heat off for when I add in the cheese??
the pasta goes from the boiling pot right into the bowl with the cheese and pepper, mix it right away... then add more starchy pasta water to make it more creamier.
@@jesperjnsson6268 I see where you are coming from but people are going out of their way to over complicate it. I mean it's literally pasta with cheese. It's damn good yes, but if it was a regular average Joe doing this people would be reacting the same way I did.
