Dinner is served everybody, and this episode #29 features lots of Cajun and Creole food items from Big Easy Grill in Springfield, Missouri!! Big Easy Grill is known as the go-to restaurant in Southwest Missouri for delicious Cajun and/or Creole dishes like you'd find around New Orleans, Louisiana, hence the name "Big Easy." I ordered 10 different items from their menu including Sausage and Chicken Gumbo, Seafood Gumbo, Dirty Jambalaya, Crawfish Etouffee, Andouille Sausage over Red Beans and Rice, White Creole Pasta, Roast Beef Po' boy, Fried Shrimp Po' boy, and Fried Catfish Po' boy Sandwiches, plus a Slaw Dog w/ Andouille Sausage. Hey Randy! I'm a new fan and I just love your enthusiasm and personality on each challenge. I do have a question... have you ever gotten choked and or strangled while doing these challenges? And one other question... I see that you can do these challenges back to back sometimes. How do you deal with weight gain and getting yourself "emptied out" so to say for the next day challenge when you have them?

Thanks for your questions Stephanie!! I haven't ever choked! To combat weight gain I maintain a low calorie diet when I am not competing and get in plenty of exercise. When I have back to back challenges, I always schedule the hardest one first. I schedule the first for mid-afternoon/early dinner time to give my stomach enough time to digest the food before bed and I drink plenty of water to help speed up digestion. It is important to get a full nights sleep and I typically use a colon cleanse to get the first meal completely out of my system before the second.

I live about 60 miles from New Orleans. My son is also "The Cajun Ninja" so we know all about cooking Cajun and Creole foods. We are also very fortunate in getting the freshest seafood, fish, shrimp, crabs, and crawfish. With that being said if they can duplicate, or come close to the quality of products we have access to then good for them. Another great video supporting a local restaurant.

@Masterlee 43, your son is The Cajun Ninja!? His recipes are spot on! I've been able to actually put amounts of certain spice, adjust them, and add things to the recipes I already had in my head or written down. You've raised him right! Now I"m more consistent in my cooking. Born and raised in Louisiana, lived all over the world in the military, have temporary roots now in Utah until I move back to good ole Cajun Country!

If anyone is wondering and cares... Roux is flour cooked into fat. Usually butter but often rendered animal fat. Cajun trinity is onions, celery and bell pepper. Which is similar to the French mirepoix. Holy trinity.

I've had gumbo, jambalaya, crawfish etouffee, red beans, andouille, shrimp po' boy, catfish po' boy, roast beef po' boy and slaw dog but never heard of *_white creole pasta._* Looked pretty good. Glad Randy went with the roast beef po' boy. It's an original classic but often overlooked. 👍

I saw you lost weight training and working out not long ago, great job as it can't be easy managing it when you eat competitively. After watching this, I wondered if you fasted the day before or after? Or if this was a cheat day as they call them? Genuinely interested as to how you manage it.

Fasting before a challenge would actually make the challenge more difficult. It is important to keep your stomach stretched before a challenge. If a challenge is earlier in the day I do a non-solid breakfast so that it leaves my system more quickly, if it is later in the day I have a lighter solid breakfast with a non-solid meal in the afternoon. Great question. My intent behind doing this Dinner Is Served series was to support and promote small businesses after COVID lockdowns hurt many businesses. Tipping is just part of how i'm supporting them. Thanks for watching!!

Because a lot of these places are still using wait staff who only make 2.13 an hour and don't qualify for unemployment so they're actually still relying on tips to survive.

Personal experience, I have a few friends that are returning to work and their unemployment is finished, however they're working with reduced hours and since majority of individuals are still doing food to go and not tipping they aren't receiving extra money. They have to wait for a certain amount of time period to show reduced salary in order for their Employers to cover the difference. But that's what I see in my state of Texas

New Orleans isn't Cajun country, Acadiana is - as a matter of fact it's very hard to get any authentic Cajun food anywhere near there. It's painful that most people don't realize the majorly Cajun/Acadian cities are Lafayette, Lake Charles, Opelousas etc. Louisiana's culture is so much bigger than NO. 🙄

Randy, wanna support a small business? Come to Picayune, MS...There's Betty-ks, Frosttop, and Stonewalls.... all have AWESOME FOOD, and I'm sure you could make a challenge out of any of them. Yeah, it's my hometown, but there ISN'T better food, in my humble opinion.
