Great explanation! Not only we have the same health issues, but it's even worse because we're not aware of them. Doctors, as well as people, have NO CLUE what's going on with our immune systems and bodies. Food allergies in that sense, and in most parts of Europe, are still just a science fiction. Grandmas suffering from rheumatoid arthritis is the most normal thing and nobody will say it's food, maybe the weather or cold water, but certainly not the food. I've struggled with anemia, psoriasis, PCOS, tendonitis, Hashimoto's and depression for so long that I had to start researching and learning on my own in order to understand what's happening and why, because the doctors, specifically in Serbia, tell people not to think about the causes of their autoimmune disorders. "Just take your thyroid medication and you'll be fine" - it's not getting better and I'm not fine. Women in general are not fine but suffering from diabetes, rheumatoid arthritis, thyroid disorders, PCOS and the list just goes on and on.

Ironically, it's the same thing over here in the U.S. I've had tons of patients from other countries over the years tell me that the health care wasn't as good where they live as it is here. But I've had thousands of patients in the U.S. get better and then ask me why their local doctor isn't doing what we're doing at the IBS Treatment Center. So it's not really any different, except that people here pay a lot more for the same quality of care!
You don't have to go to Europe to test this. Buy some products made in European countries. I did and have had no problems whatsoever eating them. I also ordered some French flour and have cooked with it. You can buy several pastas that originate in Italy. I am not celiac. I have had non-celiac gluten sensitivity since 2009--just about the time they started using glyphosphate differently here in a way that does not happen in Europe. I think I may be only sensitive to glyphosphate. After all these years.
I will disagree and I'm highly sensitive to gluten and I decided to buy European wheat and I still got the same reactions that I do with normal wheat here in America. It was just as bad.
At this point in time, I tend to believe more in what my body tells me. I spend plenty of time in Europe, especially in Greece and I get glutened there just as much as in the US! I do feel as bad being glutened there and I tend to be glutened in Greece more because it seems to be not as well known to be a problem there. I get my utensils in the breadbasket because that’s where they put them. Flour in omelets. I’ve even had bread arrive on watermelon. And yes I do tell them no bread, no flour, no wheat, severe allergy in English and Greek.
Yea. Americans who are willing to eat the gluten in Europe aren't actually avoiding gluten, are they? I'm sure that they aren't avoiding it in that states either. So they are probably not the most trustworthy of sources.
