I’m a brand new home cook since my wife passed away in April. She bought me the Emeril Pressure Air Fryer and this guy has been amazing in giving me confidence to try new recipes, especially since many of these are not included in the instruction manual that I received with the cooker. This guy is amazing and has made cooking exciting for me. Keep in mind that my wife used to do all of the cooking for us over the past 30 years

I noticed something when you were cooking the steamed buns and how you said you could only do one layer, you actually have a second layer and may not have realized it. So the little metal tray you set them on actually sits inside the grey basket that you didn't want to try stuffing your whole chicken inside of earlier on. There is a little lip on the inside of that grey basket thing that you can set the metal tray you cooked the steamed buns on. That will give you two layers using that grey pot and the metal tray as a second shelf inside the pot. :)

My grandmother used to pressure cook her whole chickens in water. She’d save the cooking liquid then pull all the chicken off the bones to use in different recipes. Then she’d put the bones back in the cooking liquid and boil to make a stock (She didn’t have a lot of money and grew up in the Depression so she didn’t “waste” vegetables by using them in her stock. Unless she had some leftover celery leaves and pieces of onion.) Once she removed the bones from the stock, she added chicken bouillon granules or cubes as well as a little butter to enrich the stock. Once the stock was reduced quite a bit, she’d use it to make to make flat “slider” dumplings. She didn’t use anything other than the stock and self rising flour in her dumplings. (There’s a lot of recipes that do use butter or vegetable shortening and milk. Cracker Barrel dumplings taste the most like my grandmother’s but they’re a little greasy.) She’d roll the dumpling dough thin, cut them into long strips, and drop into the boiling stock then let them boil for 20 minutes or so. Right before she added the dumplings she’d put in the small pieces of chicken that she pulled off the bones when she strained the stock before adding the butter and bouillon. The bigger pieces were saved for other recipes, while the small bits were used in the dumplings. She also didn’t pick the bones completely clean, as boiling in the stock removed all those small bits which are difficult to pull off the chicken. That chicken broth from cooking a chicken was like liquid gold and was never ever wasted. I often roast a chicken or get a rotisserie chicken then use the bones to make homemade stock. I save the small bits of chicken and make homemade chicken and dumplings. Although I usually cheat and buy Anne’s Flat Dumplings which I get in the freezer section of my local grocery store. You can get Anne’s Dumplings on their website annesdumplings.com if you don’t live in an area that carries them.

I have a dog and unless I want to pay an arm and a leg at a pet store, I make my own stock to use in treat recipes and so forth for her. No seasonings added to the meats when I pressure cook them. Just the meat and bones themselves. Then I season the meat for whatever I plan on making. The bones are again added to the plain broth however to make stock for the dogs that is safe and healthy! My grandma also did what yours did with making do with what was at hand... in addition to having a garden for their own veggies and fruits. They canned, froze and dehydrated so much. I know part of the reason I've had a healthy life is because I wasn't eposed to so much 'preservatives' in store bought foods.

This is what I do, and I am too young to be a grandma! Using every bit of juice and meat and bones from a chicken is some of my favorite ways to make delicious food cheap in my world. I will often make chicken, then stock, then cook up a bunch of rice in that stock, then have chicken and rice for dinner in various forms. YUM!

I got one of these several months back partially due to this video. After some initial trepidation it's been a game changer for our household. It really opens up a lot more possibilities for quick but amazingly good meals. Most importantly for me, dry brown rice and dry (non-kidney) beans take about the same amount of time, so even at my laziest, I can just toss them in together with some seasonings and 35 minutes later or so I have a delicious dinner base for literally pennies per serving. Highly recommended! Now to branch out beyond the pressure cook, saute, and stir fry functions...

You can definitely cook beans without soaking but soaking actually gets rid of A LOT of dirt from the beans, compounds that cause flatulence AND makes the beans easier to digest! If you want beans tomorrow, just give them a scrub, discard the dirty water and soak them overnight. Don't forget to discard the soaking liquid.

@@MrDforDavo okay, interesting to know. yeah i think this is just the americanized version of stuff, so here in the states when mexican restaurants are referring to taquitos, you can expect them to be smaller and made with corn tortillas, and when they are referring to flautas, you can expect them to be much larger, perhaps even filled with more stuff, and made with flour tortillas. i'm sure authentic mexican food in mexico is mostly very different! but for american purposes, this is pretty much what you're going to see.

I am testing an off-grid setup with 2.3kW of solar on 20ft container right now. I am planning to use electric kettle, single induction hob, a grill/sandwicher and a blender. I will probably get a pressure cooker with air fryer and a food processor, since they are so versatile. I used to rely on microwave to reheat a lot, but I am not missing it. It is bulky and I don't have much space. The same applies to baking in oven. Power won't be an issue for at least 6 months, for the worst winter months you can get a quiet inverter power generator as a backup.

You do have a double steam or air fry option using the dark gray insert and the that same metal plate. Works great for making 2 things at once or a large quantity of one thing.

Just bought an Instant Pot Duo Crispy / Air Fryer. I was a bit disappointed that no cookbook with basic recipes came with the unit but this video clip did a "marvelous" job ticking most of the possible techniques. Feel free to add more at any time. Editing my 1 year old post (which is now 2 years old) I keep getting drawn back to this video clip like a magnet. I wouldn't mind being able to simply download it and save it so I don't have to search for it. Can't say how terrific this content is.

With larger pieces of meat like that, especially when it's not going to be in a sauce, you want to go with the natural release. It only takes about 10-15 minutes. otherwise it's going to be tender, but dry as the sahara.

@@candinunya5211 You can let it depressurize naturally all the way, or for most recipes, you can NPR for 10 min and then Quick Release. That 10 min gives the dish (usually a meat) the benefit of the natural pressure release, redistributing the juices.

One of my most praised recipes that everyone loves is to fried a lot of garlic in chunks quickly on the instant pot, sear the chicken a bit with salt and pepper, put a bit of white whine inside and cook it like that for 15-20 minutes. Move the chicken to a roasting tray that can handle all the liquid the chicken had, then make a lemon sauce with lemon, fine chopped garlec and parsley, pour it over the chicken and broil it for 5 minutes so the raw garlic cook enough... and it tastes amazing! You have to be sure to have very good bread to dip in the lemony sauce, because that could be the best part of the dish!

I discovered your channel two days ago, and love it! I have lived "off in the woods" since 1986. Losing electricity is a huge difficulty. Whether from snow/ice or hurricanes and thunderstorms downing trees, we couldn't cook on this marvelous device. (And my well water pump requires electricity, so there are flushing/water problems.) Of course, not everyone lives in the boonies! I see these devices as the wave of the future, replacing our power-hungry traditional ranges. My 2021 Instant Pot has made cooking grains, veggies, etc faster & more affordable. I bought an AF as a substitute for using my conventional/convection oven in summer. Your channel has taught me to cook bread in the AF, vs heating the kitchen! Trying very soon. Bless you for this excellent information.

I have zero kitchen instincts, so making fancy foods (ie. Anything more complicated than scrambled eggs 😂) intimidate me so I rarely try new things. Your videos have given me a lot of confidence, I've already branched out to "weird(ish)" veggies and pickled things. I've been thinking of getting an Insta for a while, now I'm sold. You make it look simple to just go in there and guess your way through the process as long as you have the foundations down - which I'm getting better at thanks to channels like yours! Thank you so much, these videos of yours, that includes mistakes and your whole thinking process, are invaluable!

I watched part of this video two years ago and thought that I really don't need another kitchen gadget to take up space. My daughter recently moved out and we were looking for toaster ovens and I saw this duo. She's not a cook, would never make a whole chicken or even boiled eggs. We bought this and she's used it a couple of times already. Seeing how fast things cooked, now I want one and am revisiting these videos about them. Maybe it is another gadget I need!

@juresichj
@juresichj 3 года назад
In the interest of safety: if you fold a dishcloth in 4ths, and place over the steam release, and use a wooden spoon or other utensil to release the steam, you are much less likely to get scalded, and, if you have overhead cabinets, you aren't steaming your cabinets, as well. I enjoyed the video. I love my instapot for every day things, like hard-boiled eggs, chicken, and bone broth. We had just started talking about an air fryer. I think you saved me a bunch of research time.
