In marinating, it reduce gaminess of meat and the fishy odour from seafood. Under high heat, most alcohol will vaporise and what is left is the aroma of it. Can you intoxicate yourself when using alcohol in cooking? I doubt so.

if the temperature is right, deep frying is actually NOT greasy. The greasiness only comes in when the oil isnt hot enough. Normally the high temperature creates steam from inside the food which pushes the oil out.
