This video brings me back to when I was a little girl and it was my first time in Mexico. My grandpa shot a rabbit in the forest and we had rabbit soup for dinner. Wish I could go back to visit him and ride his horse while picking berries and hunting with him.

Nice! Anytime I hear people say they wouldn't eat jackrabbit I always reply "then you cave never had my carnitas-style jackrabbit tortas!" It can be a very good meat source, quite tasty and has been on Indigenous menu for thousands of generations for a reason.

Favorite recipe by far would be Rabbit Frickacee like my great grandmother used to make . When my uncles would go hunting for Rabbit 🐇 they would bring several back Recipe called for 3 large jacks or 4 medium. Clean and rinse rabbits then chunk them up and par boil them to soften them Drain in a colander pat dry , salt and pepper the pieces then dip into a cup and a half of buttermilk mixed with two eggs add hot sauce and cayenne if you like it spicy. Dredge in flour and spice mixture to coat the Rabbit well and set pieces off to the side to rest while you cut up two large onions into thin rings place the onions in a pan with bacon grease to soften and caramelize. Fill a deep pan with crisco ( blue can ) About three inches deep. Fry rabbit until evenly brown and drain on paper towels. After frying the Rabbit pour off the grease but keep about four table spoons of the grease in the bottom of the pan . Add all purpose flour to make a slurry and cook it till it just turns tan then put onions into slurry mix well ans season with salt and pepper to taste. Then pour enough milk in mixture to thin it out and stir it constantly scraping the bottom so it doesn't burn . Keep adding milk if it thickens too much. (Cold milk won't lump up the gravy) when the gravy is to your liking put fried Rabbit in a large casserole dish and cover it with the gravy and onion mixture. Cover with aluminum foil or a glass lid and bake it at 375 f for about 35 min . Make garlic bread or cheese Texas toast and serve with fresh sliced tomatoes and cucumbers, corn on the cob ,and mixed greens of your choice. I like turnip greens 😋. Cold beverage of your choice would work but traditionally we had hot coffee with it. Man o man what a feast .

My aunt raised rabbits and would make fried rabbit with cream gravy. Pretty much the same, but she didn't bake it, and she served it with her homemade rolls.

This was your 1st. Jack, I can promise you it tastes good because you cooked it right but mostly it was a young Jack. Stay away from old ones with spit years and check it's liver for a clean solid red. I've been eating Jack's for over a decade. Great video I'm going to try your recipe on my next hunt.

@@ThatGuy-sc5rxIf a rabbit have a spotted liver (typically white or yellow spots), it indicates the rabbit may have tularemia or some other disease. Always wear rubber gloves when butchering/field dressing rabbits and carefully disinfect everything afterwards.

Jack rabbit is a very frowned upon meat. But if harvested and prepared correctly its absolutely delicious. You did a great job on this cook video! Yeehaa!!

Look up some of the Appalachian squirrel recipes, like squirrel gravy...Jacks and squirrels are quite similar in texture and fat content...

Mashed potato flakes work great for thickening stews,I personally like mine just cook over a fire, but James this stew looks amazingly delicious. Maybe u can make rabbit taco's James,might be better then pork.

I’ve never eaten jackrabbit, I used to see jackrabbits by the hundreds. I have not seen one in years? I have only eaten maybe two cottontails just battered and fried them like chicken. That stew look very tasty 👍

This looks good! You can also try adding flour when making stews to thicken it up to avoid having/needing to smash the potatoes. I'd probably add some carrots and some cilantro for added flavor. Happy hunting!

Thanks for this cool video, I want to try that stew style someday. Last time I ate jack rabbit was a few years ago while me and my homie were hunting. We took down a jack rabbit and marinated the back straps over night. Then we cooked them on a makeshift rock stove since we forgot the grill. Then we put it in between two pieces of cheese bread that we toasted on the rock. Added some veggies and bbq sauce and went for it 😎🤙

Great instructional video James. I must try Jackrabbit. Like you mentioned, I've stayed away from Jackrabbit because of old folklore and old wives' tales, but you made this look delicious.

my first time cooking rabbit i let it cook in a crock pot for 2:30 hours and the meat fell from the bones and then i put my other stew stuff in. best tasting meal ive ever made tbh.

@@JunkyardFox oh it was, after I pulled the rabbit out to get the meat separated from the bone I added my other stew makings like small purple taters, red onions, carrots, and I believe something else, but the spices was Bay leaf, pepper, salt, and cilantro. Made a great first rabbit stew, pretty sure I did all that on the fly without any real knowledge on how to make a good stew.

You should check out some of the camping spots just outside of Cloudcroft NM! Take the Sun Spot Hwy. and just choose a camp area they are all beautiful! We try to tent camp as many times a year as possible!

Chicken fried, might have to marinate that jack rabbit in some butter milk for a day or two though. Looked delicious,( a bit on the zippy side🤣) very nice my friends 🤠

That looks truly amazing. I'll have to try it. My favorite rabbit recipe is very similar to your recipe, rabbit and andoullie gumbo. Instead of using potatoes I make a roux with flour and peanut oil and saute the onion, celery and peppers (Cajun Holy Trinity) in the roux separately. The roux thickens the stock wonderfully when you combine it. I also quarter up the rabbit and brown the meat in bacon drippings before adding the stock to boil it, so you kinda cook it twice and it breaks down the texture perfectly. Add the meat and stock to the roux and you are in business! Let it simmer low and slow until the meat is falling off the bone. Sometimes I add Rotelle tomatoes because I like them so much. I used to raise rabbits for meat and I love rabbit!

I was about to recommend a very similar recipe lol. I use beef bullion instead of chicken, cause red meat needs red bullion. I also grill or pan fry my rabbit before stewing and use a flour based roux

_oh yes, as I posted on one of your fb posts that I just had a rabbit stew a few days ago. I decided I can't eat supermarket meat anymore and I found a local place that delivers wild, hunted game. (My health doesn't allow me to go fetch my own although I have in the past) holy moly! Venison, wild boar, pheasant, rabbit, squirrels, mallard. All so much better than what I was eating and sustainable and ethical too. So good and really pretty much the same cost_

I have never eaten a whole rabbit before but ive eaten rabbit burger. Maybe you should try that. Ground a jackrabbit at home and turn it into patties and make a simple burger or a recipe that has ground rabbit inside

Awesome! Looks tasty! I have to admit that clip of you skinning the rabbit with that huge knife looked pretty funny. Rabbits have really loose skin, so once you make your first cuts you just pull and it comes right off: that knife wasn't doing anything

I’ve seen jackrabbits so big when hunting whitetail 🦌. From a distance I thought they were yearling deer. All this was within 40 miles from San Antonio. 🇺🇸👨🏻‍🦼🪖🙏

Born and rasied in az, a gun is the best way to catch a jack rabbit. Ive tried trapping them but it wasnt very easy or successful. Also, you cant bait or trap them in arizona without a special liscense so be careful of that. They are also great grilled and then finished in the oven low and slow, that gives you the smoky grilled flavor with the slow cooked tenderness 🤤

Looks really good bro, I haven't had rabbit since I was a kid, I bet some hatch green Chile would work perfect in rabbit stew. I'm from New Mexico and I need to get out and do some fishing and camping. (Get my boots dirty).

Your knife cuts like crazy!!! I know it's soft food, but believe me, I know when a knife cuts,sliced like that, is perfectly made and not like most knives knowdays, where most people praise, when in reality are very poorly designed and their performance sucks. Good job on the design, and my kudos to the maker, he did a hell of job!!!

oh this knife is a scalpel! ive processed trout, catfish, wild boar, rattlesnake, i use it in the kitchen damn near every day, and it can still do small batoning, feathersticking and whittling

I bet your stew is quite spicy, I love spicy peppers and often put them into soup when is ready. I think the heat magnify the spicy flavor. Looks yummy but never eaten wild rabbit myself

Should have added some apple cider vinegar to the boil. Like just a 3 Tablespoons. It will change the meat and blow your mind.

Hi James, thanks for the recipe. Here in Calif rabbit season for jackrabbit is year round. Cottontail and all other types are July to first Sunday in January, Someone told me that not to eat jackrabbit till after first frost due to parasites in rabbit. Is this true or do you have any other info? If I am in survival mode I need know what is true.

thats some old wives tale folklore, a rabbits internal temperature only changes if it dies. if it has parasites inside it, that parasite is gonna be nice and cosy in its innards, the outside weather wouldnt affect it.

Pioneers would not waste a bullet on a cottontail. The jackrabbit would provide 3 times the meat for that same bullet.

I wanted to ask you if you removed the "piojo" from the hind legs when you skinned and cleaned that jack rabbit. That's the source of some bad smelling "musk" that makes those not very good eating unless prepared correctly. It could also be that this was a young jack rabbit. I half expected it to not taste good but I am glad it did.

@@BrettVaughnB100 definitely. Any animal can have worms. I’ve seen them in fish, birds, reptiles. You just gotta inspect your kill when processing it, and if it seems good, cook it thoroughly.

That’s some outdated folklore. The weather will affect fleas and ticks bit inner parasites wouldn’t be affected by external temperature, another reason why a long hot stewing is good, kills anything like that.

Oh Yeah, That's how my family cook rabbit.. take the gaming out , its good meat, just watch out diseases when hunting rabbits in the wild. its like older days.
