Another round of STEAK TENDERIZATION today! This time we're going with dairy marinades. We'll soak our steaks in 2% milk, greek yogurt, and sour cream and see how they stack up against our control steak. The ratings are primarily for tenderness but we'll talk about flavor as well. Enjoy!

I'm surprised! 4hrs is a very long time. I only use 45mins for Sour Cream. Maybe I'll do longer next time. 😉

I think your 45 mins might work better in some situations! The steak I did was really tender and didn't taste bad by any means but it had a distinct sour cream flavor after that long. If you were making some nachos or something it would be good to do the full 4 hours. Otherwise the flavor threw me off just enough that I probably won't do it that long again for a steak by itself. Thanks for the feedback btw! Next time I try the sour cream I'll know to go a little bit less time! 👍🍺

Cool evaluation. I’ve marinated skit steak in milk with slices of onion overnight and then grilled it. Really good and very tender. Good job !!!

Buttermilk works best. Just a little warm. Let it sit for like 15mins. Rinse, pat dry, season, frill, or pan fry. It's tender. I did the same for my beef roast. Cooked it with buttermilk.

I'm just curious why you did not choose whole milk just for the fact that it has all of its enzyme properties then 2% milk

I was just experimenting, but that doesn't mean I won't experiment with whole milk in the future!

Another awesome test. I would be down with the sour cream marinade. How do you think it would work using blue cheese dressing?

@@BBGrillShack I’ve put blue cheese crumbles on one before and love it. I’ve never marinated one in it. I think it will work.

I have to tell you that I tried the same technique and whole milk is actually the best method to tenderize the meat not 2% milk

I think you over marinated the steaks with the dairy. I did the sour cream method before for one hour just like Guga did and the steak was so tender it almost fell apart and it did NOT taste at all like sour cream. Btw I used the cheapest and thinnest cut of ribeye and was blown away

Thanks for the feedback dude! Mine did taste a bit like sour cream but like you said I marinated like 4x as long. Also, I don't think it would've been all that noticeable had I not been comparing it with other steaks back to back 👍. Tenderness was on point. I'll have to try it again with 1 hour instead of 4 next time!

Dipping cube steaks in milk will almost always begin to cause it to fall apart

I wonder if it's a good idea to tenderize in milk first, then marinade in whatever flavors (soy, oil, etc). I'm thinking of trying this with flank. There was a dude who rubbed dry milk powder instead.

Whole Milk works better. The fat contains the enzymes that's why.
