Pro tip salt the steak at least a couple of hours before you cook it. The salt will move inside the steak via osmotic processes resulting in meat with a much more evenly seasoned taste, instead of a steak where the outside tastes seasoned and the inside tastes bland.
@jameson5508
@jameson5508 5 месяцев назад
You can accelerate this process by adding something acidic, like white vinegar or citric acid alongside your seasoning. It also tenderizes a rougher cut of steak. Don't let a steak sit too long in anything acidic though, more than a couple hours is too long. I wouldn't do this for anything expensive, but for cheaper cuts or for something like a pot roast it can be a good method to tenderize and add flavor.
@djjazzyjeff1232

Facts, it'll also draw out the moisture, but then as it penetrates draw DOWN the moisture deep into the steak, if you salt say 10 minutes before grilling (the worst thing you can do.) all it has time for is to draw moisture out, and then it's vaporized in the pan/grill, and that sucks because exterior moisture is the enemy of good browning!

@@djjazzyjeff1232 I came to say the same. Either salt hours in advance if you have time, or right when the steak goes on the heat. Never in between. Edit: hard no on the pepper. Pepper burns on high heat. Pepper after cooking if you like it.

I'm all about the Montreal steak spice, but I also like s&p, on the bbq (that's for beef). My dad's a moose hunter, so when it comes to moose steak, in a cast iron pan, lots of butter, salt and pepper. Then we scoop that melted butter and pepper mix on our potatoes. Yum

I liked the workshop set better, you guys got to come up to Colorado and we'll show you how to do a steak for real. You got a wood fire it, and wood selection is key mesquite is best followed by hickory applewood it's a close third. First side down bare, flip after 2 minutes, watch for the blood bubbles they'll start on the edges and move to the center, that'll tell you where you're at from rare to well. Don't feel bad, ranching is what we do out here. Much love and I look forward to more videos! 👍

If the chef is one who cooks a lot of steaks (and does it very well)?? It's gotta be Blue Rare for me. Blue with a nice sear and some mashed potatoes. Mix the blood/juices in with the mash? I'm in heaven

Well now this video has given me a whole new idea of content to send you seeing as how this could be a trigger topic…imagine watching all the Tik Tok compilations of cooking steaks the wrong way. I can just imagine the torture that would be for you both, unless you see Gordon Ramsay react to those, his roasts of ppl are hilarious as always lol 😂 Probably gonna paint a target on myself here, but who cares. I haven’t eaten red meat in ages, decided to go pescatarian as, since I’m west coast, could not live without seafood, and just recently added poultry back so no longer true pescatarian. In my defence though, more cows for the rest of you so you’re welcome! 🍻🇨🇦

If you want the best steak ever Season with salt, pepper, garlic powder Sous vide for 2 hours at around 130°F. Take it out Lightly Pat the outside dry with a paper towel Pan sear the exterior in a hot cast iron skillet to get a good crust on the outside of the steak Make sure to sear the fat cap too Let sit for 2 minutes Cut and serve

As a South African I like to bring a point of order to this argument. 1. BBQ is all good and well but a Braai is by far better. 2, there are two schools of thought to making the best steak, one is a S&P, 2 to 5 minutes on each side, no flinching. And the other is cave manning it, no salt, no pepper, straight onto the coals for 3 to 4 minutes, scrape what coal you can off the meat, let cool for a minute and eat. Bound to put some hair on your chest. And if you're a real panzie you'll put some 5 gun spice on that baby, cook it for 4 minutes on each side, bitch that it's over cooked and eat it like you're the late queen of england whilst sipping wine with your mother in law that hates your guts but you're too afraid of her to ask for a mans meal and a good beer.

Lol Boys, being a three star michelin trained chef , I'd rather eat feckin dog food then what yer describing eh? Ever hear of the "Law of Thermodynamics?" Yo Chris, osmotic process is right on, only apply that technique right before flipping. I.E. Law of thermodynamics, also let the steak rest for 5 minutes to allow the heat transfer to draw the seasoning into the meat as the temperature equalizes
