Safety note. Angelica is an advanced level plant and bares some resemblance to hemlock, which is lethally poisonous. Only people who can identify the plant with certainty should attempt this. See more info in my post on angelica below.

Other than that, this is a basic method of how I candy angelica stems. A classic wild food tradition from France. This is sold commercially but you'll pay an arm and a leg. Use the finished, candied stems in cakes and pastries, or served as an after dinner sweet or mignardises platter.

This summer I tried this recipe using Anthriscus Sylvestris (Cow Parsley) and it turned out really good, almost like the one i did last year with Angelica stems, but the flavour is not as strong so you can enjoy it as is. Thank you!

@@foragerchef4141 On the English Heritage channel there’s a series called “The Victorian Way”, and the host is Mrs. Crocombe, she uses Angelica in some of her recipes!

This looks nice - do you know if Angelica sylvestris will work as well? I find it regularly here in Germany.

Found it in my literature. In France they use A. archangelica and A. sylvestris, but the latter is said to be less aromatic.

Should this be refrigerated between runs? I don’t have a dehydrator, would it work to dry these out on the countertop? This is what I’ve seen in other recipes. Thanks!

Sorry if I missed it, but what does it taste like? This is my first time hearing of this ingredient. Thanks.

It tastes very strong, floral and herbaceous. The plant is often used to flavor gin.

Wondering how this would work with Japanese Knotweed.

Yes you could. They’re so good as pickles I wouldn’t though, personal preference.
