Hi, yes you definitely can! I actually prefer the way they come out from a dehydrator but I know a lot of people don't have one. I would recommend either putting them on parchment paper or a solid dehydrator mat if you have one, otherwise they'll stick pretty badly to the racks and have the rack imprinted on the back.
I have no idea how they do their pears, but I'm almost positive they don't candy them like I did here! They use some other process to get theirs perfectly flat.
