#WithMe - In the last month, we’ve seen tinned foods disappear from our shelves like it’s canned gold. But, our question is, shouldn’t we appreciate tinned foods more all year round? In this episode, our Chef, Ben, whips up a few tinned treats for our normals, Jamie and Mike to see if they’re prepared to give the canned cuisine the attention it deserves.

Shama's Kitchen A brief glimpse of your channel shows that your “recipes” are actually not super helpful. It seems like you only started displaying the amounts for the ingredients (a pretty important detail) like a month ago. And in one of your videos, the ingredients were literally “plain flour” and “dough.” Do you have any idea how many types of flour and dough there are? Sorry for the harsh words I’m about to say, but improving your content should be your first priority, not whining about your unpopularity on a much more popular channel.

@Michael Crabtree, I think you missed the entire point of this video! The benefits of canned food is you get many ingredients at a prepared/ideal stage. the Norms have to be able to select, prepare and cook food properly which are all the skills that cooks/chefs already have and they mostly don't... Using a school test example, those of us who cook already have the "answers" in our heads, while amateurs still need to learn the lessons first.😅

Here in Belize Spam and Corned Beef are regulars in house holds. We fry the onions and pepper (finely chopped) in little butter first, then add the corned beef. Cook until all that white stuff melts (lol) and add an egg or two. Turn corn beef to scramble egg, when the egg is cooked your meal is done. Some white rice, fry plantain, veggie salad and you have yourself a great dinner!!

Canned spam is lovely, with so many applications. My favorites are in scrambled eggs, Hawaiian in musubi, and learned from a friend from the Philippines, fried with a side of piping hot white rice and banana sauce. To any who aren't familiar with banana sauce, it's a red sauce that came about as a ketchup alternative during ww2 while there was a tomato shortage.

My mother used to can beef in glass jars (seasoning it with salt pepper, bay leaf, pepper and garlic or rosemary). Then all winter she would boil up some potatoes, onions and carrots until tender, add a quart of canned beef and thicken the broth with a slurry of flour and water. It was the BEST BEEF STEW ever. We also loved it sandwiches, or wrapped in puff pastry and baked. YUM.

Cooking with food scraps - we cook 2/3 meals a week using vegetable scraps as the main base + 1 or 2 other ingredients & seasoning (usually enough for lunch the next day too) - reduces food waste, brings our weekly food bill down massively, combats over buying & makes use of some of the more nutrient rich parts of the veg. Might be a useful thing to try at this particular moment in time.xx

We always had tinned food around, I'm not even sure if I ever tasted a real peach until I was 10 or so. Mom would open the tin and spoon a few wedges of peaches into each bowl, along with all the juice, and then put sour cream and granulated brown sugar on it for a special family dessert. Spam was also a staple because it will be good for a long time; we had it in our emergency food stash always and when mom would take out the old food to put in new cans, we'd eat the old stuff. Spam and eggs, chopped Spam in pasta sauce over noodles, spam in soups, Spam musubi. When I was in college and I'd get the munchies, open a tin of Spam, cut it into chip shape, fry it up. I still keep Spam, and now tinned corned beef and tinned roast beef (I don't like this as much as the others), in our emergency food stash and we've had to resort to eating some during our month-so-far Stay@Home isolation since the fresh food doesn't last long enough. We have a stock of tinned tuna, sardines, mackerel, kippers, shrimp, clams, and other seafood/fish just cause we like it (drain most of the liquid, sprinkle with lemon or lime, shake on some cayenne pepper). Some of us have forefathers who lived through times of not-much-food-around times who appreciated when gov't sent out tinned foods and I guess our great grands and grands have passed it down to us. Many of my friends from places like Guam, the Philippines, Tahiti, Fiji, etc. relied on tinned food, Spam especially, to make it through and they've developed some really good recipes, there are even recipe books out dedicated purely to Spam. Like frankfurters/hotdogs/weiners, if you don't think about how they make it or what parts they use in some of it, it's fine--just don't compare it to the real meat. And in all my years of eating tinned meats/fish, I have never gotten sick from any of it which I can't say about some meals I've had in restaurants.

Might sound ridiculous to you but cook out some kimchi in sesame oil, soy sauce and sugar - it's the base for a lot of kimchi stews! Pure beef bone stock is the best to add to it, but you can use the runoff from your rice or just water. Add spam and you will never see spam the same again. Silken tofu is also a great addition

There are some good tinned clam chowders on the market. Some far better than others. If you can find the Bar Harbor one, great, otherwise the Campbell's chunky New England one. Obviously not as good as the real thing, but enhanced at home a little, a decent lunch. Good olive oil small tins of tuna are a go- to, like Calipo. Tinned creamed or sweet corn can be used when corn is not in season. Tinned peas can have their place, but the frozen ones are better. Canned olives can be good. Chinese canned BBQ sauce - the classic one in the silver can - delicious. If it doesn't have to be a metal tin can - traditionally jarred canned food means endless options. Plus you can see the product first through the glass jar.

This episode gave me an idea. You should cook Lobster Thermidor a Crevette with a mornay sauce served in a Provencale manner with shallots and aubergines garnished with truffle pate, brandy and with a fried egg on top and spam.

In Hawaii they actually eat a Spam Sushi. You line a press with rice and put spam cooked with Soy Sauce stop it and wrap with a strip of Nōri to hold. It is actually pretty good.

What I’ve learned from this series is that meat is cheaper in the UK than it is where I live In Utah. £10 vs & $19 for a duck or £8 vs $15 for a kilogram of pork shoulder.

For a tinned product to see how you can incorporate it into a meal, you can buy tinned bugs which are intended for eating, some are just for snacking on their own, but would like to see them being incorporated into a meal

@@SortedFood Suggestion, tiny kitchen cooking. I realize that your home kitchen isn't "tiny" most of the time, but tiny houses are still "a thing" and gaining popularity. Also, RV's are becoming popular again, for off grid or on the move lifestyles, maybe a tiny house then an RV and see what you can do?

Yes, I personally don't eat many tinned foods as I dont like sauces or soupy textures but I keep well stocked up on dried goods, variety is the key, if you have plenty of different things you can make variations on everything. Most people go wrong by buying 10 tins of 2 or 3 things rather than 2-3 tins of 10 things

Between the freezer and the pantry, we like to keep about 2 months worth of food. Not because of doomsday or anything like that, but purely the fact that you never know whats going to happen tomorrow. Is the car going to blow up? is the water heater going to split? Never know when some large unexpected expense is going to happen. if you have a good buffer of food and savings, you never really have to worry.

@@krablord But it's not as Huffle ducks commented a "British thing" which was my point I didn't state that it was a US only thing I merely pointed out that it wasn't a British thing. However when most people state that something is a "specific nationality thing" they are usually referring to the region of origin and not just where the item is culturally significant. For example someone might say that the TV show friends is an American thing that doesn't mean that the Friends is only culturally significant in the US

Hey, Sorted! That little bit at the end where Mike was saying that they need to expand their knowledge of how to effectively use tinned food... I think that should be your next cookbook.
