A delicious bean salad that is filling and fresh enough to be a meal on its own, but light and colorful to complement a main entree such as grilled chicken or fish. Using some key components of Lebanese recipes, like radishes, garlic "taratour" dressing, and zaatar, this salad is refreshing any time of the year.
Other ideas: Top your fish with it to make a fancy plated entree, or add a smashed avocado and then scoop it with pita chips like a bean dip
Ingredients: (** indicates that it can be found in the Sassool Mediterranean market section)
4 cups cannellini beans (boiled) **
1.5 cups Artichoke heart pieces **
2 tsp dried zaatar**
4 garlic cloves
.25 cup extra virgin olive oil**
1 tsp sea salt **
.25 cup lemon juice
.5 cups chopped parsley (more for garnish)
2 cups diced cucumber
1 cup diced tomato
8 chopped radishes
Directions:
1. before you prepare your salad: Boil your cannellini beans for about 1, then rinse and drain. Cool before continuing.
2. In a mixing bowl, mix dried zaatar with artichoke heart pieces until the artichokes are coated. set aside.
3. with a mortar and pestle, smash the garlic into small pieces. Then add salt and continue to mash until the garlic releases its juices. Mix in EVOO and stir in with mashed garlic, then add in the lemon juice and stir once more. Set aside and return to the mixing bowl.
4. Add in the cooled cannellini beans, followed by the parsley, radish, cucumber and tomato.
5. top with the dressing and mix well before serving.
