2 T. lemon juice
6 oz. dry fruit pectin

Hi Mrs Lori, I really LOVE waching tou cook and can all of your fruit and vegetables. I just watched you canning your BLUEBERRY PERSERVES.THEY LOOK SO DELICIOUS. I WISH THAT I HAD ONE OF EACH. I AM NOT ABLE TO STAND VERY LONG ANY MORE, that really bothers me because I was always busy doing everything that I wanted. Including tuck pointing chemleys, and roofing my home. Why do people get old (LOL), and not be able to do the things that they love to do. I even wired my daughters friend house trailer for her telephone. I turned 78, Dec. 28th, and I sometimes feel useless for the things that I LOVED TO DO. I LOVE YOU and MR. BROWN SO MUCH. GOD BLESS BOTH OF YOU.

Miss Rose; I feel your pain and frustration. What capabilities and stamina Covid didn't take, this old age is finishing me off. I am so despondent that I can't do anything without taking at least 15 minute rest every hour. I will keep you in my prayers and thoughts; my advice is to just keep trying and don't be defeated. Be proud and congratulate yourself for smallest accomplishments.

I always loved mama's preserves- especially her pear preserves-when we moved here to the farm in Illinois in 89- that my husband grew up on -the fence around thecorn fields had lots of wild grapes -so i made grape jelly-oh it was so good -a much richer flavor than regular grapes- now -i havent ever water bathed jelly or preserves -just put it in very hot jars and put hot lidson them

I've been doing my own thing ,with low sugar pectin, I don't like all that sugar, I'm using honey and a bit of sugar and splenda. We are both over 60 , we must consider our health.i love watching your videos , love you guys !!

Thank you Miss Lori.🙂 It made me laugh out load when you were talking about making room in the freezer. I think many of us have that challenge.😄 The first thing I ever canned was apple jelly and that was almost a half century ago. There certainly is something about make jam (bread too) that warms the heart and spirit. Some years back, someone suggested adding grated ginger to peach or apricot jam. Now I must get ginger when I get peaches or apricots. 😋 Blessings! 💜

Really enjoyed the fruit preserves demonstrations today. You always make everything look so easy, which gives us all the courage to try the recipes. Thank you so very very much for explaining add more pectin. For Xmas one year I made a bunch of different jams and NONE got thick. I just named the jars from Jam to sauce add 1 box of cream cheese . Serve as a dip, lol It worked wonders, new name. I take my used lids pit a X on them. I clean jars, dry then put reused lids with a ring for storage. Keeps the dust etc out of jars. Of course I wash again b4 using. Watching this jam video from Beautiful Southern Iowa.

I just canned this had 15 jars. I measured to 8 cups after crushing and added 3 jalapeños to batch. Soooo good. 🙏

Miss Lori I have one of those antique jar lid lifters too. Amazon sells new ones that look like the old vintage ones. If they search Amazon use "Mason jar opener no lid dents or damage multi-purpose easy twist manual handheld top remover utensil made" . I had to watch this video. I've only used pectin twice and both times it came out like rubber cement. After the second time I gave up and learned the french method of reducing it down for thickness. There's a temperature 220 degrees if you can hit that temperature it guarantees your jams/preserves will set up. No pectin or Surjell needed to make jams.

We make peach jam from our heirloom peach tree and we use raw turbinado cane sugar, the brand is (sugar in the raw). So good. This sugar smells like brown sugar.

I should have learned to can from my granny and great grandma, lived far from them and didn't get to visit much. I taught myself to can from videos just like this one. I did a lot of canning when we lived in Alaska because when it got cold, there wasn't much else to do. I grew to love canning and making preserves. It's a very satisfying feeling to know that you made it yourself. I taught myself to make homemade soap as well. Thank you for sharing your faith and knowledge of the old ways. Both are treasures. Your video reminded me of my childhood. I spent a lot of time with 2 of my great aunts. The one cooked the other drove and ran the errands. Almost everything I was there aunt Clara was making jam or jelly. I remember cheesecloth bags haging from doors on almost every kitchen cabinet collecting juice for jelly. Thanks for this wonderful memory I haven't thought of in many years now.

Those preserve look so good. I have made strawberries and peaches before but it has been a long time. I might do some soon. I don't think my recipe said to put that much pectin in it, and that is probably be the reason I wasn't as think. Thanks for the idea to put more in it. You make everything look so easy

Hi Miss Lori. I never knew you could make preserves from frozen fruit, just never thought about it really. I hope you have great luck with your red currant bushes.We live in Ontario Can. and I planted 2 going on 4 yrs. ago. The first year nothing, second yr I did get about 1.5 cups and was so disappointed. But the third year was amazing and had more than I knew what to do with. Thank you for your hard work making these video's , I love having you for company.

We used to melt parrifin wax and put on top of ours instead of lids.I’m 74 and that’s the way my grandma did it.

I still have paraffin wax. If I cannot get canning flats, I will use my wax!!! I heard that during the depression, the wax that was removed from jam was washed and saved to reuse again.

Miss Lori I lost my husband. I have been raising my granddaughter. He's been gone 4 yrs. I struggle daily bc my granddaughter is allergic to good home cooking. I haven't been good at gardening. She's 10 yrs old. I'm in NJ . I am going to pick blueberries hopefully Tomatoes are 400 A lb and corn 8 a dozen. You are a blessing

Just last week I got out 8 qts. Of Ziplock bags of blueberries I had left in my freezer from our own blueberries from last summer. I had thought I had used up all of them making blueberry pie filling last fall. But then my hubby was in our large freezer looking for something else and found all these bags that had gotten pushed to the back. So I got them all out and thawed out. And I had enough to make another 7 quarts of blueberry pie filling! Yah!!!! It is my favorite pie filling. It is so good on angel food cake. And pancakes. I already have enough jam and BBQ sauce using my blueberries. Got the pie filling recipe from our county extention office. It uses clear gel. Doesn't use so much sugar that you can't taste the fruit, like some pie filling recipes. Happy canning!

I've reused lids too but only the ones that have went through a water bath. I've never done it with lids that have been used in the pressure canner. Guess I figured I'd have less success. Who knows. lol Have a blessed day!!

You don't have to skim the foam off the top some people do, no debubbling jam, preserves or jelly

We used to go to Augusta to pick strawberries when I was a kid. We have a place just down the road that sell blackberries and strawberries called Scatter Creek Berries here at Paragould. Love strawberriy and blackberry jelly.love your channel.
