Often, the biggest problem with foraging wild mushrooms is having too many. Preserving wild mushrooms is a great way to have tasty wild food all year long. Canning chanterelle mushrooms for long term storage is relatively easy. You'll need a pressure canner, but not much else. Drying wild mushrooms is also an option, but dehydrated wild mushrooms can limit how you use them later. Learning to pressure can wild mushrooms should be on your list of foraging education. In this video we look at pressure canning chanterelle mushrooms for long term storage. These canned wild mushrooms can be used in most chanterelle recipes as you would fresh wild chanterelle mushrooms.

I used to dry some of them but it takes a lot of space. Now I am drying but after that I grind them into powder. It takes much less space to store, the nutritive value is retain and the flavour can be used in cookings.

If you can, see about finding a local foraging group. They often host hikes to get people started with foraging wild foods. There is so much out there to harvest!

Thanks for the video! I have a bunch of White Chanterelle Mushrooms to do. I did some last year as well. Worked great. I think this year I'll put some fresh garlic in as well. Give them a little extra flavor!

another preservation method is freezing the partially cooked chanterelles in butter...they keep for a couple months...and they taste incredibly fresh.

How do the mushrooms hold up? Do they get too mushy for like pizzas or frying? I plan on canning leather back mushrooms

Excellent. I hit the mother lode & found 8+ pounds of chants two days ago, and can only eat so many before they spoil, and drying is a PITA, and I love canning (does anyone actually reuse lids? Weird?) - many thanks !

Wouldn't it be better to strain the braising liquid and use in the jars vs clean tap water? Picking today, hope to can tomorrow. Great vid.

I can’t say one way or the other the correct answer, but I wouldn’t want any contamination from the braised liquid inside my jars when canning. Clean filtered tap would be my preference.

great video. Can you cook the chanterelles in butter, garlic, salt, pepper and garlic in a pan, then add a few sprigs of fresh parsley and then can them? or would you leave out the salt when you are sauteing them and add it to the bottom of the jar as you did in the video? Thanks so much

I would recommend doing that and vacuum sealing and freezing instead of canning that particular recipe. Check out or latest chanterelle video for more info if you can. Cheers!

Is there any reason you process yours for 1 hour rather than 45 minutes per USDA guidelines? Was wondering if you did so because they’re wild mushrooms?

About how long do they store when you can mushrooms? I've never actually canned before. I want to buy a house later this year and I plan to have a garden. I want to start canning now so I can ready for harvest 2021. 🙂

Hi Brett. Unopened, the mushrooms should last anywhere from 3 to 5 years. The main thing that deteriorates is the flavour and texture.

Morels dry out and rehydrate very nicely. That’s what we do with them. I suppose you could can those also though.

Does anyone can milk cap/ leatherback mushrooms???? I have a crap load and was going to can them in a pressure canner but have not seen any videos on them anywhere on RU-vid

I know you need to find videos from Karelian Finns. They salt brine the milk caps. As far as I remember they cook the mik caps for 20 minutes before the jar them.

Hi , it's me again.. lol I took all of your advice. I canned my chantrelle mushrooms yesterday. It has been 24 hours now and the jars have air bubbles in them when I jiggle them around. Is this normal??? I certainly hope so.... Thanx for your patience with me.

Do you find the canned mushrooms disintegrate more than the dried ones when cooking ?

Not really. They are pretty much the same as canned mushrooms you might buy at the grocery store.

What is the salt for or supposed to help with? Just wondering if it matters what kind of salt to use or if it can be left out?

Salt is for flavor only. Sea salt is preferred to any table salt that has iodine in it. The iodine makes the juice cloudy

They should stay in good shape for over a year. Most sources would say 3 years or so.

You have to put water otherwise it would ruin the canner.

That is so totally the wrong way to can, First get your water boiling, lower jars gently into canner, exhaust pressure canner for 10 mins with no weight. after a good stream of steam has exhausted for 10 mins, install weight and pressure can the recommended time with the weight gently jiggling .,
