OK Jessica you are really getting into my head. I was watching a video this week and a lady was making salsa. She was straining out her tomatoes in a colander and letting all the juice go down the drain. I was like "no don't waste that you can boil it down or freeze it." Nothing goes to waste! Then I smiled Jessica...would be proud of me. 😊

🥰 after seeing all of those apples and peaches canned up, makes me want to go and get some fruit and start canning!! Those look great 😄 With all you have to do with the kids, and you are still able to cann food and freeze dry some things....wow, you're awesome!! I think her older children have been taught to be helpers, even her littles help…..one of them always help with the baby and the younger children. No computer games to distract them and when they play the play together. Homesteading family has I believe 11 children and they work together…..that’s the way it was in my home growing up….first chores then play……I went to public school ….it was so different then. Science, history,home ec, art and music rooms all to learn from…….a lot has changed. I envy modern homesteaders allowed to home school now….we were made fun of if e tried when raising mine……I love Montessori teaching and now I see lessons on the internet……

In the UK we eat chutney in cheese sandwiches, so cheese and chutney sandwiches, so maybe try some of that toast for Adam as grilled cheese on toast and put chutney on top. Glorious!! Kisses to Hannah, the cutest baby ever ❤

I made apple chutney once; I paired it with a soft spreadable cheese on crunchy homemade bread. I had the same thoughts about paring it with pork dishes. Pulled pork comes to mind. It will definitely get more over time. More sour, more sweet, more flavor.

Jessica I sprinkled cinnamon on the ground around my beans this year and it really helped with the bunnies. This is the first year that my beans did not get eaten by the bunnies

I’ve been making pectin from my apple cores and seeds. There are some downsides. It has to be refrigerated and it’s cloudy, so you wouldn’t want to use it for jelly, but it worked great in jam. I’m also not sure how it would work with low sugar. I want to experiment with freeze drying the pectin and see if it still works. If it does, I’m going to keep making it. You got so much done! You have to be proud of the results from all that hard work.😀-Natalie

Nice! We picked 8, five gallon buckets of pears yesterday at my in laws house and I will preserve them in a few ways in the next couple of weeks. Today we will be canning around 9-12 quarts of chicken and stock and freezing some kale. I really enjoy this challenge. You do so much for your family and motivate the homesteading community.

My kitchen looks very much the same with produce, full canning jars, a freeze dryer and dehydrator running. It’s a beautiful time of year to honor an abundant harvest. The mess you speak of is a lovely sight in my eyes. Thank you for all the great tips.

Funny, I wrote this BEFORE I watched the whole video! Lol. Great minds! Lol. My hubby found a hack to get the pits out. Take a pair of needle nosed pliers, stink them in at the top around the pit, twist and pull. It WORKS GREAT!❤

In England we have a traditional roast for dinner on Sundays then on Mondays I absolutely love left over cold cuts of meat with the left over veg fried together as a bubble and squeak and homemade chutneys on the side. Green bean or pumpkin chutney is also absolutely delicious x

One way to get that bright green color the store has to your beans is by adding a tablet of zinc/25 mg to your jar before canning. It gives you an added nutrient and a gorgeous color for those of you who care. Amish canners have done this for decades.

Have you heard about the upgrade from 4 to 5 trays for the Freeze Dryer? I watched Kevin and Sarah Living Traditions Homestead) install theirs and it does seem very easy - just a computer update and replace (slide in and out) for 5 trays saving you 25% of your time! Your pantry looks fantastic! and your kids are still smiling and happy - what a success harvest season!

My dad was a canner, he and his dad used to put it on bread at meals. He would make chutney and chow chow. I believe the reason for the different colored vegetables was for a pretty presentation, he would put them in the small fancy jars and would gift them out. My ex. used to put either of them on his tacos, he liked the savory ones more than the sweet. Until next time much love 💖💖

We did 17 pints of fresh corn and 15 pints of green tomato salsa. Next up clean and store over 100 heads of garlic. Freeze dryer comes tomorrow. Have 6 huge heads of cauliflower to freeze dry.

So excited to see you got peaches! I just picked 3 bushels of peaches off my mom’s dwarf peach tree! Never thought of salsa! That will be my project tomorrow! Can’t wait to see your other peach recipes! There are still probably 5 more bushels of peaches left on her tree!

I am loving the month of August and the #everybitcountschallenge. Our pantry is getting so full with food that our family loves. Jessica I do believe you’re a very very blessed momma ❤ I honestly don’t know how you do everything you do in a day, I keep my 13 month old granddaughter 2 days a week and it seems like my entire day is devoted to her and entertaining her. Now when I was younger with only one baby I could do a lot in a day (multitasking), but now that I’m older I guess I’m totally out of practice of doing things with a little one.

I love this. I was going to pressure can my celery but now I think I will pickle it. Never thought about pickling celery. My family loves peach scrap jelly. Great inspiration.

My husband likes cream of celery soup in his tuna or chicken casserole. So I cook up a large portion of celery in chicken broth then I purée it because we prefer smooth soup and then I freeze it…..comes time to make the soup I add butter to a pan and warm the celery purée in it then add cream and butter and seasonings to taste. It’s good when you add noodles to it and sprinkle some cheese on it when served….makes a good winter lunch along with crusty bread to dip in the soup. Have you ever made cinnamon candy apple sauce….my littles loved it…..

I know a lot of people don't like canned celery, but I can a LOT of what I call soup mix in quarts..with half a jar carrots, a 1/4 celery and a 1/4 onions...makes amazing flavor to add to almost any soups ..I use it in chicken noodle, any cream soup and beef stew...I will do about 50 quarts every year...I also can pints of just celery to add to my chowmein recipe

@UpNorth069 I would do 40 min for your elevation....I honestly have always hot water bathed them for 3 hours like my mom did for 50 years🙂I have always put a tsp of canning salt per quart and water

Another wonderful video! Than you for sharing it with us. So far this summer I've done 65 quarts and 19 pints of tomato sauce, 7 pints of tomato marmalade, 18 quarts of dry-canned potatoes, 9 quarts and 34 pints of sweet corn, 6 quarts of corn chowder base, and I don't even know how many quarts of pulled pork (guessing 18?). Busy, busy, busy!

I love the kitchen "mess" this time of year too! Taking a moment to realize how blessed we are when the counters are full of fresh produce is something we share. My husband and I have learned so much from watching your videos. I am now a proud owner of a pressure canner and a huge bag of arrow root to make pie filling! Hubs went shopping on Amazon!😂 In the past, pressure canning scared me too much to try it, but my husband and I did it together and it’s no big deal….just follow the instructions! Great video. So many delicious looking recipes. Regarding chutney, I grew up eating chutney. I am 65 and still make my great grammas green tomato chutney. We grew up eating it as a condiment to meat. Especially beef or pork or moose. The nice things about chutney you can make it out of anything, anyways great video Jessica, thanks 🌷🇨🇦

The freeze dried pineapple sounds delicious. I saw on Living Traditions Homestead that you can get an updated insert for the medium freeze dryer that holds 5 trays. You just have to contact Freeze Right.

I just did two boxes of peaches. That was a lot of work, but I know it will be worth it this winter. Apple, peach sauce is one of my favorites.

I’m not a fan of dried ginger but fresh ginger is a different flavor profile. I also don’t love dried turmeric, I don’t hate it but fresh turmeric is wonderful. I know this is irrelevant but I’m putting it out there anyway 😂

If you don't mind some sweetness in your chicken or turkey salad, a tablespoon of chutney is wonderful! Maybe more if you're making more than a pound of salad or so.

We used to make chutney with yellow cling peaches (when I lived in South Africa} and they are delicious with curry or with lamb cooked on a "braai" (open fire barbeque). They are delicious grilled on the braai served with lavender ice cream.

Loved your video! I have some peaches that I am working on, made my first ever Zesty Peach BBQ Sauce! I decided to make a Cranberry Peach Conserve , and the rest will be canned up for my shelves, I think. I might try a peach salsa, yours so looked good and my tomatoes did not do well this year. Cream of celery soup(?) You can freeze it! And use it as needed! Use it for a sauce on meatballs or pasta...anything you want really I love the pickled celery idea! I gotta try that!!!

The chutney looks fabulous! I was gifted pears so I made pear/ cranberry chutney. Took the cores and made pear jelly. I love your " no waste" commitment. It's harder to do than you think! All the best to you and yours!

Great job with all the canning! The chutney looks so good! In my country we like go eat it atop of cheese and biscuits (you would call crackers), it’s so lovely. Even a few tablespoons added to meat dishes like hamburgers or meatballs, adds a real depth of flavour.

Once again you reminded me of a forgotten recipe; peach salsa. I used to make often but as my family shrank and I moved to the city, I forgot how delicious and simple the recipe is So this afternoon I will source peaches and peppers to make a small batch. It is wonderful over pork chops or roasts but also over sausage to make a rich gravy to pour over rice or potatoes. Your kitchen seems to be exploding with goodness. Cannot wait to see how you will utilize the root cellar and cold storage. Thank you for sharing your knowledge and making my week.

If you’ve never tried braised celery, you should try it. You braise it in chicken stock. We love it as a hot vegetable with roast chicken.
