Awesome, awesome video -- Canning 101! I can't tell you how many questions you answered for me in this video. I'm new at canning (well, kind of...I was raised on a ranch/farm and we canned everything, but all I ever did was cut up fruits, veggIes, meats. My mom was afraid of the pressure canner so she wouldn't let us near it... Plus I didn't like veggies when I was young so I didn't pay attention, lol.. now, I love them!) Question: ...I have been canning hamburger and ended up with a total of 15 pints more than what I planned. So.. I made my own recipe of taco seasoned meat. It was thick when I put it in the jars. I timed it the same time as regular ground beef and the jars all sealed, Should I have any worries at this point? Thank you.

I was just talking with my wife about how we were going to add the ground turkey to the spaghetti sauce when SHTF and then I came across your amazing video. Wow, you are a natural teacher, making everything so easy to understand! I never even thought of canning but now I think I can (pun intended) after watching your professionally done video. Hi! I just wanted to say that this weekend I used my pressure caner for the first time. All told I did 54 lbs of meat. I only lost 1 pint jar to breakage, in the final batch. All others sealed successfully. Thank you for your canning videos!

When cooking bulk ground meat like this I use a potato masher to break up the meat as it browns. Easier that trying to chop the clumps up with a spoon or spatula. Be gentle you don't want to make the pieces too small but a very helpful little trick.

I bought a 921 canner yrs ago and have never used it due to lack of knowledge... I have been binge watching your videos. Thanks for the very informative videos. I now feel confident enough to take out my canner, and use it for the first time. ( I am a monkey see, monkey do kind of learner.). I will re read everything again but at least now it will all make since. Your videos are great as far as all of the steps in the process. Since our 7.0 Earthquake last week... I am looking at both cooking and freezing foods in jars but canning some as well there by not all my eggs are in the same basket. Love your videos and thanks again.

AK Washkeeton we live in an area where an earthquake is more likely so when I see shelves of glass canned food I wonder how any of it would survive intact a few jolts, jitters, and waves. I'd been looking at Lehman's and they have something like a three row egg carton for pint size and quart size made of plastic-it looked pretty and was pretty expensive. Perhaps a rail around the edges of the shelf would help, perhaps bungee cords between jars for cushioning, and a rubber mat beneath and perhaps hot glued to the shelf above... And the shelving unit anchored to floor and wall? Sigh... Surely someone has already figured out a good solution, hopefully.

You could put the jars back in the box they came in. Next treat it being on the shelf like you are in the navy secure everything from being able to move. Shelves secured to the walls and a brace across the front.

YES! Finally, someone else says they don't simmer lids. A lot of canning that I do is cold pack and as long as I take to heat up cold water with cold jars, the lids are heating up also. I also don't sterilize jars as the temperature is sterilizing the meat and jars together. Thank you. So many other videos go on and on about cleanliness, etc., and then they wipe their hands along the way on their pants and a few other things while handling equipment and food. Drives me crazy!

For all naysayers, YES this works. And the reason to do it is if you find a good deal or a bulk deal on meat. You could freeze it, but canning it is much better in terms of preserving the nutrition for a longer period of time, and you don't need to burn electricity every single day to do it. As far as people complaining about the flavor... have you never made beef stew? You need to add things to it. Plain meat is plain meat. If it isn't high fat, and/or high quality, it won't taste as good.

Hi Tim, I'm also from the UK but can only find these Canner pressures from the USA. Did you buy yours from overseas or did you manage to source in the UK. Maybe you have had yours for a long time.

@@smellybaam Hi Matt, I currently don't have the space for it where I live at the moment, but I am looking to live off grid on a homestead in the future. You can appreciate being from the UK, anywhere that is a good price isn't necessarily able to be set up for self sufficiency. I would also go by the US government guidelines in this instance. I'd have to import the equipment as even good old fashioned pressure cookers are out of fashion here. Best wishes!

Pete hanson Check Tractor Supply Stores, Farm & Fleet Stores, e-Bay, Craigslist, garage/estate sales, Facebook Marketplace...I just saw a brand new 23qt Presto for $30. Other people have mentioned resale stores. They are more difficult to find right now, but impossible. I’ve found store websites can be inaccurate. They may say that are sold out, but when you go sometimes it’s sitting on the shelf. Good luck!

I'm currently making pint jars of Chili, soup beans' spaghetti sauces, etc for my 88 yr old mother. She is still living alone in her home. My goal is to lower her prep time to have a home cooked meal. The freezer type meals are so non nutritional exceptionally for those need to watch their diet.

Have about 50lbs of ground beef and 40lbs of chicken. About to buy 100lbs more this coming weekend from a local farmer. I really don't want to standing line waiting for my piece of bread 🤣🤣

You are wise. If trucks quit coming to your area stores would be out of food likely within 24 to 48 hours. People should have a minimum of 60 days of food storage in their homes in my opinion. Most people have less than ten days of food storage and that is foolish.

I might not mind standing in line for bread, even though I make my own-but I am canning meats because I refuse to eat insects and caterpillars, like Gates would like for me to eat.😂😂👍🏻😝. I am totally new to canning anything, but RU-vid has excellent teachers like you. So far I have canned 60 hamburger pints, and 30 chicken breasts pints. And I am not done yet. 💪🏼

my mama used to can sausage, and she stored hers upside down so the fat would "rise" to the bottom of the jars......no stuff to scoop through to get to the meat! Thanks for your videos!!

Im so happy I just found your chanel! I just got my canner 2 weeks ago and canned tomatoes and sauce. My hubs made a huge batch of spaghetti sauce with ground turkey and pork saussge. I used your video for the canning time of 75 mins.

Thanks for the information. I grew up eating canned venison. But the way my grandmother did it, wasnt passed on. Now after watching your video i feel comfortable canning meat like my grandmother did.

I'm sure someone has mentioned this already, but just in case they haven't, a good way to clean up the black in the bottom of your canner, use a tsp of cream of tartar and a splash of white vinegar during a canning session.

Sage confusion question: I keep hearing NOT to add sage, but doesn't sausage contain sage including homemade sausage? Is there any special that needs to be added or removed?

Hello from Washington state. I am slowly working through all your videos and have already subscribed. I love how you explain things! A lot of your philosophies and ideals are exactly the same as mine. I have been canning and preserving for years. Now we are trying to take it up a notch. Last year we bought 10 acres and we are trying to ease into homesteading. Such an overwhelming feat sometimes! You have given me strength and ideas to continue the road to self sufficiency that is much needed in these times we live in. Thank you both for the time you put into these.

Something I have done for years, maybe you have and found it not for you, is to brown my meat and put it in a covered roaster in the oven to keep it hot until I have all my meat browned to can. This way I don't have to fill jars and let them set in canner while I wait to brown and fill the rest. For me it saves time and works fine. I also use a roaster that covers two burners to brown my meat in so I get more done at a time, not sure that would work on a flattop range like yours, I have gas burners. I have been watching your videos and find them very informative and very interesting to say the least.

If you want to get rid of the lable on the old lids, I would suggest using a Mr. Clean Magic Eraser. They work well dry and even better when you wet them a little.

I've watched several of your videos now and I have to say I like that you emphasize how you close your caner using "opposite toggles" mechanics refer to that as 'star' pattern and you use it for everything from covers to tires on your car. So, possibly, without even knowing it you are using good maintenance practices and I do like that you emphasize that. Anyhow, I'm going to finish this video, go to bed, and try to figure out how to try and convince my wife that we should start doing this too. You have great thorough content in every video I've watched so far and seem to have a real passion for teaching people how to do things the right way and not lead anyone down any pitfalls. It's useful, easy to understand, and extremely practical so keep doing what you're doing, my wife doesn't trust me in the kitchen for anything but home made pizza and soups/stews maybe she'll let me start doing this if I can sell her on it.

Just wanted to say I just got back into canning again after a long interlude. I thought I’d brush up on canning &refresh my memory. I picked ip a book, "USDA Complete Guide to Home Canning". I looked up something on potatoes after checking the website you recommended the NCHFP. You’ll be happy to know the NCHFP & the USDA were identical. I don’t know who copied who but the info was exactly word for word the same. Anyway, I wanted to tell you I love your style. You don’t act snobbish when you tell people about your All American canner like many canner YTers do. No kidding. I caught a video the other day and the woman was so apologetic about her Presto pressure cooker, it was sad. She shouldn’t feel bad for owning a Presto. For Heaven’s sakes. I also like how you admit if you’re changing a recommended procedure. I actually watched a "self-proclaimed" canning leader of the viewers while canning raw potatoes she said, "they don’t say there’s anything wrong with canning raw potatoes so it must be okay". What an idiot. The books always list a raw pack & hot pack version if they approve it. If not, they list the protocol they approve. I’m not saying I wouldn’t go against some of the protocols but when one does, they should own it, admit it, then the viewer can decide if they wish to duplicate what they watched. Anyway, I just want to say, thank you for being an honest, down to Earth, person. It’s no wonder why you have so many viewers. Stay the way you are.

I have seen a few ground meat canning videos on RU-vid but this one by FAR is THE best! Ima definitely share this one. Maybe this one will convince my hubby it's a good idea! I've been telling him this is what I want to duo but I don't think he really 'gets' it yet. Thank you so very much for your videos I always find them easy to watch and very informative. 😀

Love canning meat! It's so nice to open up a jar of meat that's ground or chunks --- shred and put over rice or BBQ sandwiches etc. and be eating in just a few minutes. Thanks for another great video.

it is awesome! so easy. we use our ground venison for tacos, casseroles,spag. sauces, chilli's. any thing you use ground meat for you can use your canned meats!

our meat is not ever gamey tasting after canning, you can do some soaks to remove some of that gamey taste. that does help, you can research on youtube or some other canning groups on facebook. the process is the same for wild game that you get. ball has recipes that you can follow for venison, elk, chicken, some fish , turkey, and others. the only thing you cant do, is make a bone broth from deer bones. the wasting disease is often dorment in deer bone marrow, so you cant make bone broth from deer bones.

As always, I adore your videos. I have the All American 941 (32 pints or 19 quarts) and have the full pantry shelves of everything from carne guisada (flourless) to carrots to prove it. I, too, follow sales but mine usually originate from restaurant supply stores and their seasonal discounts (Mt. St. Helen's Corned Beef in March...along with 50 lb. bags of red potatoes and boxes of cabbage), hamburger (July 4th!) and of course, the roasts available during the winter months for those jars and jars of processed, pre-browned, canned in their own aus jux to mix into a great gravy with hot mashed potatoes and tender veggies. Last Fall, our ice-heavy trees had our power out for nearly two (2) weeks. Yep, our campstove for quick breakfasts, our wood stove for baking or soups and stews...those jars popped and meals were usually ready within ten (10) minutes. EXCELLENT video. You're doing God's Work, my dear. Now, if only more of His Children would listen...

Terrilian Reya, do you find the size of your canner difficult to lift or work with? I like the idea of being able to process twice as many quart-sized jars at once.

Not at all. I'm a tall, strong woman, ex-cop who loved to weight lift but it's really not that heavy empty. I use my gas range and I don't worry about moving it until it's utterly empty of jars (just a couple liters of water) and completely cool. Yes, processing multiply quart and pint jars saves time and for us out here in the sticks, propane. I've heard of glass cooktops shattering if someone uses a 941 due to both the weight and the heat of the thermal glass. I've canned multiple batches of whole milk, roast beef, corned beef and chicken when I find a sale. I use our local Cash & Carry in Burlington, WA. They have GREAT meat sales that you won't find at a Costco or Sam's.

When my grandma was a little girl, her family lived near a beef ranch. When the US got involved in WW2, the government started taking livestock to ship overseas to the troops. My grandmother's father helped the rancher shoot, process, and can a good majority of the ranchers herd. Some of the meat was still good 20 years later. That being said, I don't think the USDA advises the consumption of meat that has been in storage for that long

Your videos are a wealth of information! After watching your canning videos, hubby and I decided to get to work on our own pantry! We bought a cheaper brand canner and tried canning for the first time, this past weekend! 20 pints of ground beef later, we are hooked! I placed my order for the American 921, yesterday! When I first bought my canner I was so scared to use it. It took me 3 months to finally get my nerve up to use it. Now I can't live without it! I love canning and have canned for the last 5 years. I love it when hams go on sale, it takes a while to cut all that ham up but it is so tender and good, I had to hide some jars so my adult son didn't eat it all!! I absolutely love the taste of canned bacon also. Thank you for another wonderful video. Love the sound of a pinging jar!

i have a question about canning bacon. I tried doing that after watching a different video here on RU-vid using parchment paper. I have issues with the texture. It crumbled to bits. So i would only use it on say salads. Do you know what would be the problem?

This video inspired me to go get a Presto pressure canning pot. Where I'm from the All American is currently 5-6 hundy. Anyways I did ground beef tonight. Roughly 6lbs. Everything worked perfectly. I brew beer and smoke brisket, pork butt etc. This was an easy learning curve. Thank you soooooo much. Cheers!

I did this last night, thanks to you. Turned out fantastic. I left my ground beef unsalted, only because my recipes are very salt-particular as we are. High blood pressure abounds here. I did, however, can 3 pounds of beef sausage that did have salt in it, and it's interesting to see that the fat composition and distribution in the jar is COMPLETELY different in the salted meat vs the unsalted meat. I can see why adding salt is valuable, as the salted meat's fat is much more tidy and contained, settled into a neat layer atop the ground sausage, while the unsalted meat is messy, blobby, and seems almost to have been smeared all over the inside of the jar. I'm using these as test cases for longevity, so it'll be interesting to see if the salted maintains its seal longer. Also canned my chili recipe last night, thanks to you. You're breaking-down all KINDS of my mental barriers to doing the kitcheny canning things I want to do. Appreciate you so much. Thank you, Sweetie.

I ordered the same canner as you have and it FINALLY got here! Yay! So tomorrow I will be canning ground beef so I reviewed your video today and noticed that you are using all stainless steel.. to boil your water ..brown your meat. I don't have stainless..does that matter? I sure wish you were here to baby sit this 62 yr old woman lol You inspire me to do things I have always wanted to do. Thank you

You can boil water in aluminum. I’m canning beef today as well. You will love it once you get the hang of it. Just always watch your pressure and adjust when needed. Happy canning!

I'm you use wide mouth jars for ground meat , it can be emptied easier and you can also slice it for sandwiches .

I’m going to mix my hamburger and sausage. I bought sliced Mild Italian Sausage at Gordon’s yesterday. I have 20 pounds of ground beef. I hear that mix is nice. The sausage is sliced for pizza topping, so that’s convenient for me. First time I’ve done this, so wish me luck!
