I add jars of water when my canner isn't full. Always good to have emergency sterile water on hand. Use it for wound care or if the pump goes out. My pump for the well went off. I used the water to make coffee & then went to fix the pump. Lol.
The government may not approve it, but i am going to have an abundance of squash this year and I'll be trying this. I'm thinking this is going to be a tasty side dish this winter! Thank you fir sharing! Blessings your way!
I have not canned them in water, I usually do with tomato, okra, and onion, garlic, celery, something like that. When I open I add rice and have what my granny called stewed okra. Beats a snowball! You are so patient and kind while you are teaching....
Hello Homestead Heart! I’m learning what I can on canning, it’s a smart way to put up ones on food, not to mention a ton healthier without preservatives. My question is, why would the government say to stop canning squash? What’s the problem, it’s a vegetable like any other, isn’t it? I like ur way of explaining, why, we’ll, either it’s me, or how others explain things, I understand what ur saying, u don’t make it complicated, I appreciate u for that, because of u, I now have the confidence to pressure can, and u can bet, I’ll be thanking u for every jar! You are so inspiring! I have never canned in my adult life other than tomato juice in a water bath and that was forever ago. Recently it's weighing heavily on my heart that I should be doing this. I love your channel and so thankful that I recently found it. How do you cook your squash that you've canned? In recipes or sauteed? I bet that would be very good.

Thank you for sharing all your knowledge! I just started canning. My presto pressure canner doesnt have a psi gauge, can I buy one and add it? How do I know what pressure it's at without one? Also how do you determine how much salt to add to what?
Government isn't in my kitchen. So will can squash if I want too. Beside I've seen a good dozen homesteaders as well as many of my female relatives can squash so I won't stop either!
I've watched 3 vids on this and each one gives a different time for pints. One was 20, 40 and 30. So how did you know which one?? I guess longer might be better? And THANK YOU for being very specific!!!

When I have extra space in my canner I put in jars of water. Then I have sterile water in my cabinet in case of emergency. Safe drinking water, cooking water or wound cleaning water.
Do you remember how many squash you had cut up to make up those 4 pints? Just curious, and thanks a bunch. I know many people that still can squash with no problems.
FYI. I just watched "Windmill Farm" cann some Squash for Frying. He made a braine of (9 cups water 1/2 Cup Sugar + 1/2 Cup 5 percent Vinegar) 1/2 tsp Salt per pint then water canned for 8 mins check out his video see what you think. He did fry and taste tested an older jar.
Blanching helps keep the vegetable's flavor, texture, color and nutrients for freezing or canning. For freezing, you would go ahead and put blanched vegetables in cold water to stop the cooking process. It's a bit of science with canning. 😉🤓
I know this video was done a few years ago but to anyone who has done this can you still fry them when you take them out... my husband and daughter love fried squash

Half gallon jars are NOT for canning in. They're so large that it's difficult to ensure they heat completely through. They're for dry food storage, storing food in the fridge, fermenting foods in, etc but not to can in. I love the half gallons for storage though & would love to have gotten a bunch free like that. I use them for all dry food- beans, grains, dry fruits, sugar, everything. I also use them in the fridge for leftover soup, broth, tea, etc.
@future homesteader 1/2 are used to can juices. Also, many Amish and Mennonite use them to can food in. I use them for dry storage myself. I don't have any fruit trees for juices.
It preserves flavor and color. They also blanch frozen fruits and veggies for the same reason, so when they freeze them they preserve the flavor and color.
