Cantonese-Style Steamed Fish
Ingredients
* 2 7oz white fleshed fish fillets(Chilean Sea Bass is my fav)
* Salt
* Shaoxing wine
* 1 large knob ginger
* 5 scallions
* 2 tbsp light soy sauce
* 1.5 tsp sugar
* 1 tsp sesame oil
* 3 tbsp warm water
* 3 tbsp neutral oil
Instructions
1. Season fish with salt and lightly drizzle Chinese cooking wine over the fish.
2. Peel and julienne ginger as thin as possible and slice a few pieces to lay on the bottom of the plate.
3. Cut scallions into 3 inch segments. Save 4-5 segments for the bottom of the plate and thinly slice the rest lengthwise.
4. Add the sliced ginger and scallion segments to the bottom of a plate and place the fish on top.
5. Steam the fish for 10-12 minutes on medium heat while you make the sauce by combining soy sauce, sugar, sesame oil, and water.
6. Remove the fish draining out all of the liquid and add the julienned ginger and scallions on top.
7. Pour the sauce over the fish and heat oil right before it starts to smoke.
8. Pour the hot oil over the aromatics and enjoy with rice.

Steam fish is one of the most underrated dish, its healthy, simple and delicated. I usually keep some of the steamed water mixing with the sauce and oil, goes well with the rice

Derek I really appreciate all the contents that you put out. Unlike most of the top rated cooking youtubers where they show how to cook but never really put the recipe in the description, this is a game changer that you always put the exact measurements in your videos. Keep up the good work man.

Congrats kid looks like you've finished a lot of bowls in your day. Also these recipes are just repurposed from other, more talented, sources. He's not out here doing anything creative. He's taking advantage of the RU-vid shorts algorithm.

Yea, we don’t drain the liquid because that contains so much flavor. Much better than adding sugar and sesame oil to your soy sauce.

Not chinese, but my mom makes similar steamed fish dish. With ginger, garlic and lemongrass/lime. We do keep the steamed fish liquid to eat with rice. Mix up a simple soy sauce, lime juice, chopped bird eye chilli to dip on the side 😊

You can also buy this steamed fish sauce in lots of Asian grocery stores, looking for a label with seasoned soy sauce for seafood, or 蒸鱼豉油 -- its Chinese name. Usually, you can buy a bottle of the sauce for under 5 bucks, and it's also great for other stir fry dishes.

The recipe is very legit and authentic, this is exactly like my grandma’s recipe. I cook using the exact same recipe and it always taste so good, while also really easy to make

Looks like a beautiful result, with the fish perfectly tender. The only step I don't understand though, is that you pour off the flavourful water under the fish (which will have the fish's flavour and that of the scallions & ginger it was resting atop), when you could easily have used it instead of the plain water you added to the sauce. Is that just because it looks cloudy, and would make the sauce opaque instead of clear? I know we eat with our eyes first, but I was just wondering if you've tried it the other way (perhaps using a fine sieve to ensure the saved stock is free of any large bits of protein)?

Chinese here - the one thing about this dish is it's hard to steam the fish perfectly, it takes quite a bit of trial and error to get the perfect timing where it's cooked but still tender and soft. It doesn't take much for it to become overcooked and tough.

I avoid eating fish as i was put off by choking on bones as a child, but this looks delicious. I made steamed trout once, it was gorgeous. Added chillies and coriander too ❤

when i make this the only sauce I use is light soy sauce after its done cooking and I fry garlic in the oil before pouring it over the aromatics.
