I'm Boone Bake.
Today, I made a cake using soft buttercream flavored with hazelnut and dark chocolate on the savory almond biscuit cake.
This buttercream is finished by adding yolk and making anglaise sauce for a more savory taste.
Then, it was nice to have a deep flavor that is different from the Swiss meringue buttercream.
I caramelized hazelnuts, chopped them thick, and put them in, but it went well with buttercream and savory almond biscuits
And another one...
I applied a lot of coffee syrup and it tasted really good.
I used coffee liqueur, but if you don't have kahlua, you can mix coffee powder or espresso to your liking.
And if you put a sheet of paper on it, it's easy to move even after doing glazing.
I want everyone to feel the taste of this soft and rich chocolate cake.

40 g yolk
25 g sugar
60 g milk
3ml vanilla extract
230g unsalted butter
80 g hazelnut paste
(Or Nutella)
50 g dark chocolate
● Hazelnut caramel
48 g sugar
16 g of water
80 g hazelnuts
10 g unsalted butter
● Almond Biscuit Sponge
3 egg whites (110g~115g)
45 g sugar
3ml vanilla extract (optional)
25 g cake flour
95 g almond powder
60g sugar powder
● Dark Chocolate Mirror Glaze
57 g water
60 g sugar
90 g starch syrup (or glucose)
50 g sweetened condensed milk
8 g gelatin
95 g dark chocolate
● Syrup
50 g water
35 g sugar
5-10 g Kahlua (or 1/4 tsp rum or instant coffee)

Water and sugar
Melt the sugar in the microwave and...
Mix in Kahlua and cool to room temperature.
