Ingredients:
Evaporated Milk - 400ml
Condensed Milk - 250ml
Pumpkin Puree (Butternut Squash) - 1 cup
Eggs - 4 large
Vanilla Extract - 1 tsp
Nutmeg - 1 pinch grated
Salt - as per taste (1 pinch)
For the Caramel-
Sugar - 1/4 cup
Water - 1 tbsp
Method:
•In a pot, combine the evaporated milk, sweetened condensed milk, pumpkin puree, and beaten eggs.
•Mix thoroughly, then blend using a blender until smooth.
•Add a pinch of salt and a pinch of grated nutmeg and vanilla extract, and blend again.
•Sieve the mixture into another pot to remove any large pieces.
•In a separate utensil, add the sugar and 1 tablespoon of water.
•Heat over medium to high heat, stirring gently until the mixture turns a golden colour.
•Once caramelised, quickly spread the caramel along the base of the utensil. Let it cool and harden.
•Pour the pumpkin mixture over the hardened caramel in the utensil.
•Cover the utensil tightly with foil.
•Place it in a steamer and steam for 40 minutes.
•After steaming, remove the utensil and let it cool at room temperature.
•Refrigerate for 4-6 hours until set.
•Carefully flip the flan onto a serving plate and enjoy!
