Caramelized Maple Carrots

CARMELIZED MAPLE CARROTS
YIELD 4 servings
INGREDIENTS
3 cups baby carrots, peeled OR regular carrots, peeled and cut up
3 tbsp butter
1/4 cup maple syrup
1/2 cup pancake syrup
2 tbsp brown sugar
salt to taste
2 tbsp chopped fresh parsley. optional
PROCEDURE
Cook the carrots until tender in boiling water. Drain and cool with cold water, drain and set aside.
Put both syrups into a pot and bring to a boil, then lower to a simmer. Simmer a few minutes then lower heat and add the brown sugar and butter. Stir to melt and then bring back to a simmer. Simmer a few minutes more until the sauce becomes slightly thickened. Add the carrots and coat well. Season with salt and garnish with chopped fresh parsley.
