Hi, hope you enjoyed it, but....Apart from the spaghetti there wasn't a single ingredient used in actual carbonara! Carbonara has no cream...EVER! The sauce is made from eggs, pancetta (Guanciale in Italy but hard to find in the UK) no butter would ever be involved. The fat comes from the rendering of the pancetta or guanciale. Onions and Cheddar ? Never would these be used in carbonara, cheese used would normally be pecorino or a mix of pecorino and Parmigiano-Reggiano (not parmesan from a tub). Not sure what you made but that was not carbonara in any way, shape or form. Will look forward to more of your videos
