Hi Matthew, it looks like my mom black fruit cake when you pour it into the pan for baking. I love this cake so much as it reminds me of my childhood days in Guyana. I remember my mom made local fruits from carmbola or five finger fruits and it was delicious also.I will be sending your recipe to my sister as she will be baking out family black fruit cake and my mom will be enjoying it with us also.Thanks for all your tips on the soaking it with the fruit juice.Great demonstration on making this cake .
Nice. I made mine using King Arthur gluten free flour and it came out really well. Next time I will add 2 more eggs using your old recipe with the gf flour for it to bind more so I can add port on top without it getting too wet and sandy. Thanks.
