I love how he refers to the pig as his friend and apologises when he needs to put the spit through. What a gentleman with true passion and compassion.

What a rich filling! So many flavors cooked for hours and permeating the meat! In a wood fired stone... A modern human has never tasted such a treat.

I once found this very old Ottoman cookbook with recipes. It's nice to see that there are so many similarities. That the Greeks, Romans, Byzantines, Turks, Ottomans everyone in that are haven't completely lost their heritage in kitchen
