@@johndododoe1411 you can make buttermilk at home for baking by adding lemon juice and when I googled it it says that it’s the liquid left over from churning milk into butter. So it’s more like the absence of butter?

@@Chachixo it’s actually the opposite haha. Buttermilk is what is left in the bowl when you take the butter out. It’s basically fermented low-fat milk. The live cultures make it thicker and more acidic, and that makes it taste kinda like plain yogurt (but fully liquid, thanks to the low fat content).

@@ZDubbed What you make by adding vinegar to normal milk isn’t actually buttermilk, that’s just slightly curdled milk. It does work okay for replacing buttermilk in recipes, but it doesn’t have the live cultures and tastes somewhat different.

Yes and no, if I recall correctly it also gets fermented before use. That's why it has a slightly sour taste to it.

True buttermilk is what remained after the fat from raw milk gets churned into butter. It’s quite watery and becomes slightly acidic due to the action of natural bacteria in the milk. Modern buttermilk that you buy in stores( and which is what any recipe written after the 1920s is asking for) is made from pasteurized, filtered milk with added cultures to make it tangy. It’s basically a thin yogurt.

These baking streams always remind me of the times I've hosted a baking session/class at my house for a bunch of teenagers from church. The kids are nice but inherently chaotic and by the end I'm just glad whatever we baked didn't catch on fire, haha.

Cupcake = cake. Muffin = QUICK bread. Muffins have a different mixing method than cake. Muffins you combine wet ingredients together and dry ingredients together, then add everything together. Cupcakes use the cake method. Either creaming butter and sugar together before adding in other fats (eggs) and flavourings (usually vanilla) before slowly folding in the rest of your dry ingredients. This makes cakes have a different crumb and tenderness than muffins/quick breads. Muffins and cupcakes also tend to have different ratio of ingredients. Phew. Sorry for information overload. Just. Y'know. Baker at work here. :D

We put buttericing with some honey mixed in for the icing on top of the carrot cake we made. Our brother and us quite liked it. ^^ We do wonder what it would taste like with the slightly salty icing though that you used. Looking forward to more baking with you two. Hope to see again later, bye!

I say Pecan both ways it just depends on what I’m talking about like if I’m talking about a dessert like pecan pie I say peh-can but if I’m talking about adding it to something as a ingredient like cake Or cookies I say Pea-Can idk if this makes sense or if anyone else does this

tradicionally buttermilk made from liquid left over after the butter has been churned but now a days most people make buttermilk at home by mixing milk and lemon juice

Baking (cooking?) idea: spinach pancakes served with crushed cranberries. Some eat the pancakes 'wrongly' with overly sweet toppings such as strawberry jam or honey. I prefer homemade lingonberry jam, but sometimes I eat them with feta cheese, cottage cheese or just plain salted butter😋
