Ms Wanda. You making this recipe, got my gears turning! I use a lot of carrots in my cooking. But, we don't like frozen. Also, we love pepper cabbage. You making this recipe just showed me that a freeze dryer will be a way that we can enjoy those things, at a later date. But, the first thing, I need to secure a squirrel proof area to actually grow some 😆, and then get the freeze dryer.
My dad used to make carrot raisin salad when I was a kid. It was just grated carrots, raisins, and mayo. He also made pear salad, which was just canned pears on lettuce with a dollop of mayo in the center of each pear half. Never thought of combining the two. That sounds delicious!
I grew up with something almost exactly like this and we don't have anybody from the South in our family. We'd always add some walnuts or pecans for crunch, also a little ginger and/or garlic for added kick, but it's pretty much the same exact recipe with what we grew up. We started it without adding any apples but later on shredded apples were a common added ingredient as well.
Thanks for your healthy idea of using 'pears' for sweetening instead of sugar, I've always used sugar like your idea better! LOVE carrot raisin salad😋 but my husband doesn't appreciate the stuff as I do, that's ok there'll be more for me! I'm still dreaming of a freeze dryer😴 ….
I'm not a big fan of carrot salad I must admit, but anything shelf stable is better than nothing! I was going to ask if you could use frozen instead of freeze dried, as we don't have a freeze dryer. You answered my question! Thank you
