Carrots with a Southern Twist
Ingredients
1 to 1-1/2 pounds carrots peeled and cut into sticks.
1 Tbsp sea salt
2 cups filtered water
2-3 cloves garlic peeled and crushed
2 handfuls of fresh cilantro
½ tsp cumin seeds
1 habanero quartered (Optional)
Directions
Prepare brine by adding salt to water, bring to a boil until dissolved. Let cool to room temperature.
Place garlic cloves, cumin seeds and cilantro into bottom of quart Mason jar.(Add pepper at this time if you prefer a more spicy product)
Place carrots on top so that they all fit vertically.
Pour room temperature brine over the carrot sticks leaving 1 inch head space
Place fermentation lid on jar and let sit at room temperature for 7-18 days.
Once carrots reach desired flavor, transfer to refrigerator
