"Fat Abbot" is a take on "Fat Albert", which was a popular animated show in the 1970's and early 80's, created and hosted by Bill Cosby. You know, Bill Cosby of Jell-O Pudding fame....among other things....
According to the South Park Wiki, the whole C word thing is an error caused by the most recent releases of Season 2 featuring some of the cursing uncensored. If you were to watch the episode on TV, that line is censored making it appear that Randy did call Sharon that however likely as they were still playing by Comedy Central's rules at the time as South Park was technically in it's infancy stage, they recorded it as Bitch as likely they couldn't get away with it at the time until later down the line. But with that, it does make for a unintentional joke.
Yeah by the time we got to Season 5 they'd completely lost the notion of what it was to be human. Hate what happens after that even though everyone loves it.
Randy and Sharons relationship is more stronger in than in later seasons as randy takes a bigger role in the show and randy driving her crazy. While funny to see randy wacky hijinks I just wish that sometimes they have that chemistry randy and Sharon had in the old seasons.

This episode was super topical when it came out in 1998, because it was around that year that US divorces actually hit their peak (in absolute terms). There was something of an ongoing national divorce crisis which started in the 1980s and didn't really abate until the 2010s and I think it fucked a lot of kids up.
One thing I do miss about the earlier seasons is how fast paced the humor was. You barely have time to process the next plot point or development and it’s ridiculously funny.
