Cat's Tongue Mushroom - Toothed Jelly Fungus Sushi? Pseudohydnum gelatinosum

The Toothed Jelly Fungus, also known as Cat's Tongue or Jelly Tooth, is one of my absolute favorite mushrooms to find in the forest. It's just such a beautiful mushroom!
These beauties are very widely distributed across the planet, showing up in North America, Central America, South America, Europe, Asia, Australia and New Zealand. Here where I am located, in the Pacific Northwest of the US, they are abundant in Douglas Fir forests, primarily fruiting in the Fall and Winter from dead wood.
Just like Hedgehog Mushrooms (genus Hydnum), these mushrooms lack gills, but are instead equipped with small spines, typically referred to as teeth, that hang down under its cap. In fact, this is where the genus name "pseudohydnum" comes from - it mean "false hedgehog". While the cap color can vary a little bit, ranging from white to bluish, to brown, the actual body of the mushroom is consistently a mesmerizing translucent white. No matter how often I see these, I consistently find myself marveling at the spectacle they present. They almost don't seem real. They are gelatinous and rubbery in texture, holding a firm shape when cut or handled.
Many people eat these raw, but in the video, you'll see that I opted to parboil my catch since it had been stored in the fridge a day or two. Better safe than sorry, right? These crazy mushrooms actually make great candy - people turn these mushrooms into candy by marinating them in citrus juices (orange, lemon, lime), dehydrating them to their desired firmness, and rolling them in sugar. I wanted to try something else - sushi! The texture seemed about right to ensure the ultimate vegan sushi, and although they lack a unique flavor on their own, they are great at absorbing flavor. They will really take well to soy, vinegar or wasabi, and you could even marinate them to absorb that full flavor if you want to take your rolls on the go and leave the soy sauce at home.
