Squid Pakoras Ingredients
- 1 large or 2 small squid
- 2/3rd of a bunch of spring onions
- 1 large clove of garlic
- 20g ginger
- 2/3rd of a red chilli (with seeds for extra spice)
- 1tsp toasted cumin seeds
- 1 tsp toasted fennel seeds
- 2 tbsp chopped coriander
- 80g gram flour
- 40g rice flour
- 60g clarified butter
Mango Salsa
- 1 ripe mango (2/3rd diced and 1/3rd pureed)
1tsp chopped coriander
1/2 tsp chopped mint
1/2 a lime juiced
1/2 a shallot diced
1/3rd of a red chilli diced
