Call me odd but I really enjoy when Taku fillets the fish. Looks like an art form and I don’t see anyone else do it like him. Especially how he used that big knife to make precise cuts.

Taku, That looked delicious. I've been making Sushi rolls for a while, but never had real wasabi. I was able to get a Wasabi paste made with Horseradish and a little real Wasabi from Japan. I found genuine powdered Wasabi root on Amazon and now I can taste the difference. The real thing is sweeter and the "heat" is different, not at all eye watering. I always in enjoy the way you prepare and present whatever you catch. What I've learned over the years is all ingredients have to be absolutely fresh and that the rice is critical to success. Of course you know that:) I have a question, my budget is limited, but if I wanted one knife around a hundred or slightly less, is there one you think would do the job? It's a bit confusing. Thank you for great surf fishing day, I used do it on the New Jersey Shore for Stripers. Cheers, Rik Spector
