You will eat carp if you clean it this way. Remove the Lateral Line nerve. This nerve involves water displacement causing the fish flesh smelly. Remove the main blood vein. Remove gall bladder. Clean fish eggs or roe. How to scale fish. How to gut fish. How to clean fish intestine. How to clean fish head. How to fillet fish. How to clean carp. How to Cook Carp. Catching carp. Most unwanted Fish in Australia
Carp are an abundant invasive fish species that has been contributing to environmental degradation across the Murray-Darling Basin since the 1960s. Carp are an invasive fish species. Carp is considered a noxious aquatic species in Victoria, Australia.
In Victoria, It is an offence to release live carp (or any noxious species) into any waters. The maximum penalty (in court) is a fine of $14,084 for a first offence and $28,168 for a second offence. I would say, carp is the most unwanted fish in Australia. If you return Carp to the water in Victoria you are committing an offence!......
Carp is not easy to catch. It took me 5 years to learn how to catch carp. Carps are very smart and fishing them needs experience, patient and planning.

I love this, we as humans most of us throw away so much food it's sad. Alot of things that people think are nasty are really tasty, some people need to realize that a lot of parts like eyeballs, stomach, eggs and others parts are more healthy than your cheese burger you get from any fast food places

Thanks, buddy. Yes. That is very true. I prefer the head and intestines. How would you cook the eggs. I am very mindful of the cholesterol. So I cook them little by little.

Most Westerners will NOT eat fish eyes or fish guts unless truly desperate. (My Filipina wife eats the eyes, though!) It's ok, all the soft parts I don't eat are chowed down by our chickens! Such happy chickens!! Intestines can also be used as bait for catfish. 🙂

I was taught to pull the mud line (what we called it) in the late 60s early 70s. Even if caught in clean water. Thank you for this excellent vid.

Thanks. I grew up in Borneo. Not easy to depend on nature for proteins. I have learned from my parents how not to waste. If prepared and cook well, the guts is the best. We could only enjoy enough guts dishes when catching enough fishes. Yes, try cooking the fish. The more you do the better you get. I have eaten over a hundred carp. We have to keep our catch here in Australia. So, I have to eat them. I really don’t want to waste the fish . Thanks for watching

Thank you so much 😊. As for the eggs. I just cooked with the meat and sometimes with batter. How do you cook the eggs. Sometimes I have up to 3 kegs of carp eggs in my fridge. Thanks again for your support and comments

Sure. Sorry for the late reply. I just posted a video on how to cook the eggs. I have cooked the eggs differently too. I will post them soon . Try it. Remember to marinate the eggs for at least 30 minutes. If not it will just taste like hard boiled egg yolk

Thank you 🙏. Growing up in the highlands of Borneo depending on nature was not easy. I still munch on chicken bones here in Australia. My children used to stopped me but now they understand. 😊😊. Thank you, again. Most will remove the gills from the fish. I keep the ones I caught. Nibbling and sucking on them are just yummy 🤤

Get a 5 gallon bucket with a scew-on lid. Drill approx 30-40 holes in bucket with .25 inch drill bit. Fill bucket with dry grain such as corn or chicken scratch feed or dry dog food. Screw on the lid, and tie a piece of rope to the handle and place the bucket in your fishing spot. The bucket does not have to be in deep water, just enough to submerge the bucket. Carp love grain and in a few hours they will be all over the area for easy fishing. Use a small, STRONG hook and place a few pieces of canned corn on the hook. Prepare to get your arms tired from catching so many. The bucket will draw fish for several days, depending on the current flow. Check bucket and re-fill as needed. We do this every year and the kids just love it because it is non-stop action and carp are strong fighters.

@@corneliusoutdoors I too like the eggs and soft roe. I put them in a skillet, low heat, with just a touch of bacon grease. Then I go back and finish cleaning the rest of the fish. The eggs are ready when the rest of the work is done. I give thanks to God that I am prosperous and can eat pretty much anything I want, but the roe is the most satiating food I ever eat.

Wow. I’m speechless. I hope I am not punished for all the food I have waisted in my life by the way I learned to clean fish. I don’t know if I can learn to do what you do. I wish I could take lessons side by side. I know when I was in the Alaska wilderness trying to survive on what I could find to eat, the salmon eggs gave me much needed energy and made me feel amazing, like nothing else I could find to eat. But now I see how much of those fish I wasted. I just didn’t know any better.

Thanks. I grew up in the rain forest of Borneo. When I was 6, the logging companies destroyed our forest. Crystal clear rivers became muddy. Fishing since then never easy. What ever we caught we eat every part of it. I don’t remember my mom removed the scales. In the soup, the scales are crunchy. My dad will put the bones over slow fire. I remember munching them like chips. Stay blessed, mate!

@@peterhipwell4632 lol.... I wish I could do that to my mates. They all know I eat carp. I did the same to my inlaws though but it was not carp. It was a black soy source pork dish. I only told them it was a mix of pork meat and a 3-metre-long phyton when they were about to leave my place. To my surprise, they thank me for not telling them. now they can go around saying they have earned snake meat. 😁

To make the muddy taste goes away, I change the water to rain water or spring water without pollution.Keep the fish without feeding for 2 months before slaughtering..

I dunno. I'm 70, been fishing almost since birth. I've tried carp every way possible. Skinned them, scaled them, baked them, Fried, them, smoked them. Taught very early to pull that line... Never been able to eat them. I guess smoked they are "tolerable".. but certainly not any other way...

I understand, Rick. Nice knowing you here. I guess I am a teenager 😊. I am 53. I never had carp until I came to Australia 8 years ago. I was so excited when I caught my first carp. Cooked it as though it was a normal fresh water fish. Oh! My! I couldn’t do it. The muddy taste was horrendous. I threw the dish away. I kept getting carp and over here we must killed it and bin it. I felt bad. I started researching ways to cooking carp. I think the most important part is, let the dish rest just like letting your steak rest. Since then I don’t even bother to remove the bloodline, soak it in milk or anything like that. I love eating carp now. I prefer carp then trouts salmon barramundi. Steamed drizzled with garlic or scallion oil and soy sauce is the best. Check out how I cook carp on my channel. Have a great day, Sir.

in east europe we only use file and meat, remove any scales best to do with pressure washer outside, so use flower dipiin it untill its fully in it and cook in pan in oil on high heat untill it gets golden crusty , lemon and tomatoes may also good on top after, but i prefer to eat more predator fish less bones, with carp its like more bones so you need to eat slower.

Amazing video. I come from a place where carp is a traditional food but I never learnt how to prepare it. This will make me eat the fish again. Did you let the fish swim in bath for 1 week to clean out the mud vein?

Thank you so much 😊. Nah… there is no need for that. Just remember, however you cook it, let it rest for 5 to 10 minutes before you eat it. Just like your steaks 🥩. Rest for 5 minutes then enjoy. The eggs are the best part. Recipe: put them with a good table spoon of salt in the freezer, leave them till they change color. Then you get them out put oil, half an onion ,lemon zest, a drop of sparkling water, and blend them with a mixer like when you are making a mayoneses . You eat them on toasted bread.

Finally got to the river yesterday and caught a nice yellow belly and a 3kg carp. For the life of me couldnt find that blood line you mention. Even so, I shallow fried and enjoyed a great meal of fish and chips. With the rain we've been getting its hard to get onto the riverbank because of black mud. Also struggled a bit with the bones as I'm not so brave to eat them. Going to try some fishcakes next time. Regards.

If u cant find it just cut all the way down the red meat on either side of it and cut the fillet in half. The red meat needs to be cut of to thats what gives it a shit taste aswell

To make filleting easier put a towel on your cutting board to keep the fish from sliding around, rinse the towel off, wash it and use it again

@corneliusoutdoors thanks, hope you had good Holidays as well. No. We had them fried in, I think traditional Panate from Crumbs, Flour and Egg. And yes, the Eggs where everywhere in the Bag. An escalating 'quite' New Years get-together. A drunk Friend had a whole Bag of fresh Carpeggs and fried them there. I tried some raw also. Provided good Apples, Snacks, for the Mayo, Remoulad, English isn't my 1. Launge. 😂 It was made with fine Onions, Apple, Dill and a lot of Garlic. Apple gives some sweetness to it. It was a very good fit, but not for me this Night. I bagged a lot, near nobody tried them, and took them home with some Dip for later. I think I would handle them same. As well as the Dip cause it was very fitting. Up here, Carp has lost very lot popularity, as festive Meal and so never heard about cooking the eggs, simply cause it never came to mind.

Same here. English isn’t my first language too. Carp is the most hated fish in Australia. Mostly used as fertiliser. If cooked well, carp is a very nice fish. Take care

Thank you 🙏. I grew up in the rain forest of Borneo. Survival, I guess. During good fishing season my grandma will make this very nice fish intestines dish. No cleaning. Just cook the whole thing using its own fat . Just add salt. It’s bitter because of the gallbladder but it’s taste so so good. I would eat 3 bowls of rice with it. The fish inert are from all kind of river fish. The bones of the bigger fishes best put over fire, crunchy, good for munching. So, I do the same here in Australia. Thank you so much. Seen my late mom and grandma cleaning fish since I was very young but never had to do it on my own until now. Made a few mistakes along the way but those failures made me good at it now. I usually eat the dish immediately after cooking only to taste the remaining fishy smell/taste. I have learned that if you let the dish to rest for a while the dish will taste better and no more smell. Thanks again for watching my video and thank you for your encouragement. 🙏🙏🙏

Hi, when it is already dead like that would removing the blood line make a difference anymore? Since there is no circulation of the blood to other parts of fillet anymore?

Good question. Restaurants usually remove the entire red/dark meat along the blood lines too. Commonly done in salmon and tuna. I hate carp and tilapia smell the most but after removing the blood lines, I prefer these fishes more than barramundi for example. The blood lines must be the culprits. There some write up on this too. My wife hates freshwater fish. Removing the blood lines before cooking, now she eats the fishes. Try it . Let me know.

Hi Rican. Yes, that is correct. The muddy the water the prominent the bloodline. Some freshwater fishes have very thin bloodline for example barramundi and trout because the water they live in is cleaner. We don’t have cat fish here in Southeastern Australia but I m planning to buy frozen one and show how to remove the bloodline. Thanks for your comment. 👍🏽👍🏽

Most common trick I’ve seen is to score the fillet , leaving just enough flesh behind to hold the fillet together, then fry the fillet. A lot of people swear by it, seems to break down those y bones enough they fall apart somewhat

Are there carps in Canada 🇨🇦? How ever you prepare the fish, let it rest for at least 5 minutes before serving. A simple drizzle of garlic oil (prepared fresh ) makes a lot of difference. Drizzle over steamed carp, over fried carp, over pan fried carp and even over baked carp. I hope you will enjoy eating these beautiful fish

Thats differrent, we here in East Europe also eat carp, but dont eat intestants, egs, basically only file and meat. One thing you can do go outside grab pressure washer and use it to clean it at begining :D will make it so easy, particulary i like more of predators

The problem is, the sack is very thin. It breaks easily and the eggs broke loose. I had to add chicken egg as binder when I pan fry them.

I have eaten quite some carps. They are hit and miss. Some smaller ones are ok to eat, just very bony. Others can be disgusting. Just not edible even if you starve. This is more the case with large specimen. Tench on the other hand are excellent. That's why I usually take the tench and release the big carps

If you cut out the ribs after fileting the fish and fry the ribs in oil it is the best tasting part with no small bones.

Both I think. Especially the darker meat along the bloodline. That’s where water displacement happens. If the surrounding water is muddy swampy, the meat smells the same and tastes bad too. By letting the cooked meat rest for 5 to 10 minutes also helps remove the smell signifying .

You can put a live carp in a fresh water tank with air supply and constant water filter for two weeks without feeding it anything. The muddy smell will go away.

Thanks, bro. Yes, that would be the best. I wish I can do that over here. We are required to kill the carp immediately after we land the fish. Transporting and keeping a life carp is not allowed. If caught in action, the fines are very high. Including possible jail terms . So, I will ways to remove the smell because I really like eating the fish. Very lean meat fish. No fat. @@corneliusoutdoors Sorry to hear that as I am from China. My mouth gets watering every time you guys catching those big carps so easy. We cannot even buy with these sizes in market. You may try some ginger, white wine, garlic,Chenpi (dried orange peels) and soy source to steam it to see if the smell could be removed.

@@corneliusoutdoors I understand that carp are invasive species in Australia and US. However, they are our important source of protein for thousands of years. We seldom fry the carp, rather, we steam them. I think it is more or less the same in South East Asia. Usually when we cook rice we would put a dish of carp into the electric cook on top of the rice and cook both them both at the same time (steaming the carp). Besides, I did not find many viedo emphasis the release of blood from prey as a standard procedure. It would make the fish meat taste much better. It can be done simply by cutting the grill, put back into water and the blood will go out automatically. I do not find videos showing how to steam carp in English. However, I include the Chiness characters "蒸魚","蒸鯇魚","蒸鯉魚" for you to search. By merely looking at the videos, you may understand the procedure. Also, "魚湯" is the process of making fish soup. Enjoy!!!

Thank you. If u fish for carp. No super expensive gears. Just a line and a hook. Use corn kernels. Put up to 5 or 7 kernels on the hook. Throw the line. Sprinkle some kernels around the spot where u dropped the hook and wait. Wait for them to make their rounds. All base on timing. If u happened to set everything just before the arrive you get bite in minutes. Also no noise or movement. Stay a few metres away and just wait. Good luck 🤞

Salt, lime, flour, milk and everything else but the most important thing is to let the dish rest for 10 minutes before serving. If in soup or sauce, ginger is a must have. Left over dish after heating it up in a microwave, let it rest with the lit open before eating. I hope this helps. 👍🏽

I found removal of that long strand interesting. I cooked a butterflied 27 inch carp in a smoker with the scales left on and the fish was great but the mud line part didnt taste that good. I do want to try it again and maybe ill refer back to this video.

Thank you for your nice comment. Yes, it will surely make a difference. I remember my Dad will remove glands from the cheeks of catfish before cooking. We don't have catfish down here in Victoria, Australia. So I have not tried that. Also, let me know if have tried removing the bloodline. ... Butterflied carp for smoking? I should try that too. I usually smoked them whole or chopped.

Haven't heard of removing glands from catfish, people here in the states dont eat them head on normally. The smoked carp recipe was loosely based on a iraq carp recipe called masgouf. It was great that way but def had a noticeable strong fish flavor that i just think wouldnt have been there without that mudline which i left in.

If you really want to try some, let me recommend one. Carp is a respected species of dish in Europe and it is the basis of the soup one must try in Hungary. I cooked the in various ways and enjoyed eating this fish. Curry, smoked, bbq, pan fried, steam, kebab style, baked, soup, deep fried, stir fried and the list goes on but the best of all is pan fried with butter and parsley. Simple but THE BEST. I will share that video soon. No need to do extensive cleaning. Just chopped cross section and cook . Yum. Hi 👋. They are not the same. Koi are very ornament 😊. Very fragile, soft, more slippery and not as “wild”. Koi are domesticated version of the common carp. I don’t think I will ever eat koi 🫠

At least I eat every part of it. No waste. Over here , people fish them and bin them. Carp is considered pest in Victoria, Australia. Releasing them will get hefty fines including jail term.

Depends how you cooked it. Omelettes with chicken eggs was good. It add to the texture. Mixed with thick batter and deep fried was good too. I also dropped clumps of fresh eggs into noodle soup or just any soup, was so so good. But just too much. The eggs make up almost 40% of the fish.

Yes 👍🏽. I didn’t know this. Only recently I started bleeding them. A total different when you eat them. I just use my fingers to break the gills. They bled well. I usually just bashed the head. Thanks for the advice. You eat carp too?

History begs to differ "Once on American shores, carp were cultivated in guarded holding ponds along the East Coast and distributed throughout North America. Carp caught on quickly. High-end hotels, like the Waldorf and Astoria in New York, featured them on their menus where they fetched the same price as halibut. The Home Cook, a popular cookbook printed in 1880, contained an entire section of carp recipes and advice for selecting the best carp: “If the gills are red and full, and the whole fish firm and stiff, it is good.” With the demand for carp on the rise, the U.S. Fish Commission distributed 2.5 million pounds of carp from 1879 to 1896." They've just gotten a bad reputation for their invasive nature and people have forgotten how to cook them. 90% of the time the term "crap fish, trash first, etc" comes down to the skill of the cook, not the ingredient.
