Hi Folks,
We finally got around to drying up those delicious capelin. We use a different recipe than just simple salt for the brine solution. They make a great snack to take in the woods and warm over a campfire.

Brine Recipe (for 100 capelin) we doubled the recipe for this video
2 cups molasses
1/3 cup coarse salt
2 cups brown sugar (add water to brown sugar to make a 4 cup solution)
mix well, add capelin, leave to brine overnight

Looks tasty my buddy , was hoping to get capelin to try that this summer but no luck. Used it on cod last year and put in the smoker was delicious.

Good one Darrell. Never heard of people eating capelin before. Only thing I ever did with them was to use them as bait for fishing mackerel. 👍🏻👍🏻👋👋

Wonderful 😊 Very similar initial steps to how I do fresh water smelt in upstate New York. My brine doesn’t use molasses (but it certainly could) I use maple syrup instead. Once the smelt are brined, they go into the smoker with alder wood. I prefer alder with most fish because it’s a gentle smoke. I do know plenty of people who bread (fish crisp) and fry their smelt though. Like with mackerel, I use pressure treated lumber 😂😂😂 Just kidding. I use hickory with oily, dark meat fish. My largest smelt are about 2/3 the size of your Caplin on average. Now I’m on a quest to try Caplin before I die lol
