I’ve eaten catfish this big and they taste “fleshy” and tough. Stick to the normal size and Southern fried.

Now I understand why high end restaurants work on such small margins. He discarded a large amount of meat off that 30plus pound catfish so he could have even sized portions. I doubt he's making fish stock with all that carcass

That was a European Wells Catfish. They may taste better at a bigger size than our new world catfish. I don't know. The only large catfish I've ever had that was decent was the flathead.

Nothing wrong with this way but catfish are really fat fish, and once they go past 4-5 kgs they start to have a really fat and oily meat, i personally don't like the meat from them i would rather eat trout or walleye 🤷‍♂️, but i really admire people that can eat this fishes and still not have some stomach aches 🤣

I don't like catfish!. there claws are sharp 😒 doesn't taste good 😮 I love salmon, sardines, tuna, kingfish mackerel, halibut, any small fish 🐠 especially shellfish like clam, muscle 💪, crab 🦀, lobster and clownfish very delicious 😋 yum, yum yum!

If you ever come to Mississippi (catfish capitol of the world) don’t do that to a catfish. You’d be asked to leave. Fried or blacked catfish is the only way. To each his own though. Chef’s need to keep it simple on this fish.

That cut isn't southern style we bleed them for 20 minutes hanging with tail cut thru main vein, and never cut into belly gut pile cleaning the gut pile on a catfish that size isn't necessary.....it's gross. And we avoid the belly meat because usually catfish that size have parasites.
