Now I want to make and decorate cakes, even if I know it takes a lot of patience, skills, time and learning. But seeing videos like this makes me want to learn bakery. Even if this "want" only may last for a day.

wonderful work, I pretty much go in the same directions as you and the way you describe as you work is the same for me. I use to cake decorate for this one lady and she called it cornelli lace but Chantilly sounds nice also.
This is so beautiful! I thought this technique was called "Cornelli Lace" but you refer to it as Chantilly Lace. Whatever its called, its absolutely gorgeous and the cake decorator is so skillful! What is the icing? Buttercream or whipped cream?
Thank you. The cornelli argument has been brought up a few times, but the baker insists on calling it what he wants to. I've asked many times. The icing he uses is called Ice-n-fill on this cake. So, it's neither whipped cream or butter cream, but it is a delicious light icing. Thanks for the comment.
@katchyname hmmmm.... I don't care to learn about the techniques so much as commentating. He's been baking and decorating for 45+ years so I'm not going to question whether it's Chantilly or Cornchip lace. BUT, it IS a whipped cream icing and it is GOOOOOOOD. I've asked him for the recipe several times to post out here but he's not so forthcoming. Thanks for the input - really.
Thank you - beautiful and nice work, I only wonder why not change the camera angle sometimes to show the work on the top happening? Just 2 (this and one more) predetermined positions, easy to tilt by fixed points of reference, a couple of times...I'm dyin' to see, and all I see is the artistes arm... not to complain, just that it'd be more effective (on me)! : )-
A common question. This is a product called ICE-N-FILL. Some where in these comments is an address and phone number. Not only is it smooth, it is delish.
I am not sure. I thought the Baker said you could get it mail order, but he then said he buys it at a local bakery supply in Birmingham AL. I swear by it though. It looks good and is light and tasty. So it is definitely worth doing a little research to find it. Sorry for the no help.
the french call their piping cream chantilly, i think the italians call it crema diplomatica, i think what he meant to say was chantilly cornelli lace but i agree, the pattern is called cornelli
I did some research and there aren't really any places to buy on line except for 1 but it doesn't give a price, just a quote. I really wanted to try it.
@alvachristians Um good patisseries will use the fresh form and so do most cake decorators! A heavy cream and granulated sugar! NOT POWDER it tends to split!
