Chatkara Dum Biryani Written Recipe With Directions:
Ingredients:
-Chicken with bone big size 1 1/2 Kg
-Yogurt (dahi) 1 cup (whisk well)
-Ginger garlic (lehsan adrak) paste 1 tbs
-Red chilli flakes (adh kuti lal mirch) 2 tsp
-Red chilli (lal mirch) powder 2 tsp
-Biryani masala 3 tbs
-Dried coriander (khushk dhania) powder 2 tsp
-Turmeric (haldi) powder 1/2 tsp
-Cumin seeds (zeera) powder 1 tsp
-Salt (namak) 1 tbs or to taste
-Yellow food color 1/4 tsp
-Water (pani) as required
-Rice double steam (chawal kachi basmati) 1Kg soaked
in water for 1/2 hour
-Green Cardamom (choti elaichi) 3-4
-Mace (javatri) 1
-Cinnamon stick (dar Cheeni) 1
-Star anise (badyian k phool) 1
-Cloves (laung) 3-4
-Black Cardamom (badi elaichi
Bay leaves (Tez paat) 2
-Cooking oil 1 tbs
-Lahori salt 2 tbs
Ingredients for biryani chicken qorma:
-Cooking oil 1½ cup
-Bay leaves (Tez paat) 2
-Black Cardamom (badi elaichi) 2
-Cloves (laung) 4-5
-Green Cardamom (choti elaichi) 3-4
-Mace (javatri) 1
-Cinnamon stick (dar Cheeni) 1
-Onion (piyaz) sliced big size 2
Ingredients for Assembling:
-Yellow food color
-Fried Onions
-Tomato (tamatar) sliced
-Green chillies with sticks
-Lemon (nimbu) sliced
-Fresh mint
-Fresh coriander
Directions:
-In a bowl, add chicken and marinate it with yogurt, ginger garlic paste, red chilli flakes, red chilli powder, biryani masala, dried coriander powder, turmeric powder, cumin seeds powder, salt, and food color. Mix well, cover, and leave it in the refrigerator for 40 minutes.
-In a pan, add water and bring it to a boil. Now, add green cardamom, mace, cinnamon stick, star anise, cloves, black cardamom, and bay leaves. Cover and leave it for 5 minutes.
-When water starts boiling, add cooking oil and rice.
Slowly stir the spoon.
-Add Lahori salt and boil the rice to 95%, then strain it. -In a pan, add cooking oil and heat it. Add bay leaves, black cardamom, cloves, green cardamom, mace, and
cinnamon stick, and cook it for 1 min.
-Add onions and fry until it changes to brown in color. -Add the marinated chicken and cook it for 4-5 minutes. Cover and cook it on low flame until the
chicken is tender.
-Add the boiled rice, yellow food color, fried onions,
tomatoes, green chilies, lemon, fresh mint, and fresh coriander. Place the aluminum foil and cover it.
-Place the pan on the griddle and cook it on a medium flame for 3 minutes. Then, turn the flame to low and cook it for 15 minutes.
-Dish out, serve, and Enjoy with raita and salad!
