I bought a steering wheel tray for painting in my car for under $10: amzn.to/3ENaJqE it's meant for working or eating, one side is for food and a cup and the other is for a laptop or notebook, it even has a pencil rest. It will friction fir on your steering wheel as is but I wondered if it could be attached to an easel. It can, all you need is a pool noodle from the dollar store!
I got to thinking, if you need it to be more sturdy you could use large A shape spring clip clamps like this: amzn.to/39l0Ogj under the tray (attach them over the noodle and legs right under the bottom of the tray for more support.
